I made fish with the heads still on tonight! I'd wanted to cook them like this for a long time but was a little freaked out by the idea, you know, big googlie fish eyes peeking out at me, but that wasn't such a big issue. Anyway, I used the roasted red snapper recipe from Mark Bittman's How to Cook Everything. I used fresh oregano, which didn't really impart that much flavor, but the olive oil and garlic really made it taste great. The flesh was very tender and fell off the bone. I no longer feel intimidated by cooking whole fish, and plan to move on to other recipes (though this was good enough to repeat).

I made the same recipe about a month ago, using trout instead. When I placed the platter on the table, my wife promptly removed the heads!

I asked DH if he wanted me to remove the heads and he said no! I think he really wanted to tell the guys at work that he had fish with the heads on for supper. I think he likes to think of me as some kind of gourmet and brag on me, which is pretty cute. The heads on thing dosn't really bother me, which is funny because 5 years ago I was a vegetarian and couldn't even look at a fish filet without feeling sick. Anyway, the dish must have been pretty good, since he promptly exclaimed that he thanks God every day that my hobby is cooking.
