vegan dishes

i remember vividly a conversation on favorite vegetarian dishes...and there was one in particular that people loved. i did a search, and can't seem to find what i'm looking for. SO, i've decided to ask people for a quick vote on their favorite VEGAN main dishes.

Pasta e fagioli, hands down! And after that, Mexican or Brazilian rice and beans. Vegetable dal with basmati rice is good, too.

Can you tell I love beans? They're infinitely versatile, and form the base of any number of vegan dishes.

Tofu manicotti with homeade sauce is my absolute favorite vegan dish to make at home.

Oddly, one of my favorites in college was a vegan lasagna they served in the cafeteria. I could never talk them out of the recipe, but it was delectable!
