Searching for a "French" beef stew for my French neighbor who broke her leg in two places, I found this on Allrecipes.com, submitted by Corwynn Darkholme. It's realllly good.
The only change I made was I added onion and I threw it in the crock on high for four hours instead of doing it on the stove. The meat was very tender.
1 1/2 lb. stew meat, cubed
1/4 c. all purpose flour
2 TBS of veggie oil (I used a teaspoon)
2 (14.5) cans diced tomatoes
1 (14) oz. can beef broth
4 carrots, chopped
2 potatoes, chopped
3/4 tsp. thyme
2 TBS of Dijon-style prepared
salt and pepper to taste
1. Combine meat and flour in a large plastic food storage bag and toss to coat evenly.
2. In a 6qt saucepan brown meat in oil. Season w/salt and pepper
3. Add diced tomatoes, beef broth, carrots, potatoes and thyme. Bring to boil; reduce heat to med. low, cover; and simmer for 1 hour or until beef is tender.
4. Blend in mustard and serve.
I used a frying pan to brown and threw in crock. Bread would definitely go well w/this...crusty bread...yum.
