View Full Version : muffin recipe baked as bread?

We have the recipe for Fresh Cranberry Muffins from the December 2000 issue. We'd like to bake this as a quick bread, rather than muffins. Do we need to change the ingredient proportions, take anything out, or add anything? What cooking time should we use? By the way, we live in Utah at about 5000 feet elevation.

The only difference would be to adjust the cooking time- it will be longer.

I make mini-loaves out of muffin mix all the time. I haven't tried using a regular-sized loaf pan but I don't know why it wouldn't work. The only problem you may have is that the outside may brown too much before the inside is done. When the loaf starts to brown, put some foil loosely over the pan so it doesn't burn while the inside bakes. Good luck!
