Hi there. I was wondering if you good people would be able to help me. I am making a cake for a friend's birthday next week and she has requested a Chocolate fudge cake. I have searched the usual sites (ie Epicurous, and several others ) but have not really found anything that truly peaked my interest. Does anyone have a good recipe they could share? They don't need to be light, after all it's for a birthday and birthday calories don't count http://www.cookinglight.com/bbs/smile.gif

I seem to be forever saying that I haven't made a particular recipe in ages, but the truth of the matter is, I haven't made this cake in ages. It's an an oldie but a goodie, though, from the early seventies, and while the cake isn't officially fudge, the frosting is--and it is very, very rich. I used to call it my Killer Chocolate Cake. The people who came up with the recipe, came up with the far more mundane, Luscious Chocolate Cake.

LUSCIOUS CHOCOLATE aka KILLER CHOCOLATE CAKE

4 squares unsweetened chocolate
1/2 cup hot water
1 3/4 cups sugar
1/2 cup butter or margarine
1/4 cup shortening
4 eggs
2 cups sifted cake flour
1 teaspoon each: soda and salt
3/4 cup milk
1 teaspoon vanilla
Fudge Frosting

Combine chocolate and 1/2 cup hot water in top of double boiler. Cookadn stir over simmering water until chocolate melts and mixtue thickens. Add 1/2 cup suar and cook and stir 2 minutes. Cool. Cream butter, shortening and sugar thoroughly. Add eggs and beat throughly. Resift flour with soda and salt. Add alternately with milk to batter. Blend in melted chocolate and vanilla. Pour batter into 2 9-inch layer pans which have been greased and lined on bottoms with waxed paper. Grease paper. Bake at 350º 30 - 35 minutes. Cool cake 10 minutes before removing from pans to cool on racks. When cooled, frost with fudge frosting.

FUDGE FROSTING

1 1/4 cups sugar
1 cup evaporated milk
5 squares unsweetened chocolate
1/2 cup butter or margarine
1 teaspoon vanilla
1/2 cup heavy cream, whipped

Combine sugar and evaporated milk in heavy saucepan. Bring to a boil, stirring constantly. Reduce heat and simmer 6 minutes without stirring. Remove from heat and add chocolate, stirring until blended. Add butter and vanilla and stir. Refrigerate until mixture begins to thicken, about 30 minutes. Beat until thick and creamy. Fold in whipped cream; chil until frosting is spreadable.

You said this didn't have to be light! It definitely isn't!

Thanks Gail....this looks perfect. She said she wanted a rich chocolate cake, and that is exactly what she's going to get..lol.

This sounds great!! I am new to BB today and love anything chocolate- what a great way to start!
