There was a recipe in Cooling Light several years back for Baileys Irish Creme Cheese cake. It was great, however, I can not find the recipe---could someone sent it to me? Please

Also, When I New Orleans in fall I had a praline cheese cake at K-Pauls that was beyond description. It appeared to be a standard cheese cake with a praline crust. Does any one know how to make a praline crust?

Your feedback would be greatly appreciated.

Dear Marty,

I have a recipe for Bailey's Irish Cream Cheesecake. Unfortunately, I don't know where it came from... It is probably not CL due to the use of heavy cream and uncooked egg whites. I have never made it - actually I forgot about it and only recently rediscovered it because it was stored adjacent to a favorite Christmas cookie recipe!

6 oz wheatmeal cookies or chocolate-covered grahams
6 T melted butter
1 envelop gelatin
1/2 c heavy cream
3 eggs, separated
12 oz Neufchatel cheese
2/3 c sugar
1/4 c Bailey's
1 t vanilla
1/4 c grated chocolate or toasted almonds

1. Preheat oven to 325F
2. Crush cookies and mix in butter
3. Press crumbs into 9 in. springform pan
4. Bake 8 min. and cool
5. Stir gelatin in 1/4 cup warm water, standing in a larger bowl of hot water
6. Whip cream and set aside
7. Whip egg whites until stiff, set aside
8. Cream cheese and sugar
9. Add yolks, vanilla, and Bailey's
10. Add dissolved gelatin and mix VERY WELL
11. Fold in whipped cream and then egg whites
12. Pour into pan and chill overnight
13. Garnish with chocolate and almond
