GRILLED TURKEY CLUB

We've dressed up the humble grilled cheese by adding turkey, mustard, tomato and bacon bits. But it still depends on the melting wizardry of processed cheese. We used regular processed cheese, but if you want to cut more calories and fat, try the fat-free version, which also melts well.

1/4 cup spicy brown mustard
8 (2-ounces) slices Texas toast
4 ounces thinly sliced cooked turkey breast
8 (1/4-inch thick) slices tomato
4 (3/4 ounce) slices American processed cheese
1/4 cup bottled real bacon bits
Black pepper
Cooking spray

1. Spread 1 1/2 teaspoons mustard over each bread slice. Layer each of the 4 slices with 1 ounce turkey, 2 tomato slices, 1 cheese slice, 1 tablespoon bacon bits, and a dash of pepper. Top with remaining bread slices. Heat a large nonstick skillet coated with cooking spray over medium heat. Place 2 sandwiches in the pan, cook 2 minutes on each side or until toasted. Repeat procedure with remaining sandwiches. Cut each sandwich in half.
Yield: 4 servings
