I have all the ingredients for this, but I dont have the instructions, cooking temp, time etc. DOes anyone? I want to make this in about an hour!

Hi Kim - Is this a CL recipe or just a generic for cornbread? I have my mother's recipe which is:
2-1/4 C cornmeal
2 eggs
1/4 C corn oil
1 tsp each baking soda & salt
1-1/4 C buttermilk
Blend cornmeal with soda & salt. Combine eggs with buttermilk & stir it into the cornmeal mixture. Stir in the oil. (Don't overmix this) Bake in greased & floured 9" pan at 425 deg 25-30 minutes (or put in a cast-iron pan for a crisper crust.

It is a CL recipe, but Im sure if I use your temp and my cast iron molds it will turn out fine. For future reference, if anyone does have the recipe (with creamed corn, sour cream, onion etc), I d like the instructions to add to Mastercook:)

Light Texas Corn Bread
If you don't have self-rising cornmeal mix, stir 2 teaspoons baking powder
and <1/2> teaspoon salt into 1<1/2> cups plain cornmeal.
11/2 cups self-rising yellow cornmeal mix
2 tablespoons sugar
5 tablespoons light butter, melted and divided
1 cup chopped onion
1 cup chopped green bell pepper
1 cup fat-free sour cream
1 cup no-salt-added cream-style corn
1/2 cup (2 ounces) shredded reduced-fat extra-sharp cheddar cheese
1 large egg
2 large egg whites
Cooking spray
Preheat oven to 425`. Combine cornmeal mix and sugar in a large bowl; set
aside. Combine 3 tablespoons butter, onion, and next 6 ingredients (onion
through egg whites) in a medium bowl; stir well with a whisk. Add to
cornmeal mixture, stirring just until moist. Pour batter into a 13 x
9-inch baking pan coated with cooking spray. Bake at 425` for 28 minutes
or until a wooden pick inserted in center comes out clean. Brush with 2
tablespoons butter.
Yield: 12 servings.
