View Full Version : City Tavern Ham and Cabbage Soup - Recipe Wanted

When we were visiting DH's family last Thanksgiving, DH, my FIL and I had lunch at City Tavern in Philadelphia. They served a wonderful ham and cabbage soup that I would love to make. It was a broth (not cream or tomato) based soup.

Anyone have a recipe?

Well, I don't have the recipe for that particular cabbage soup but I do have 3 other recipes. One calls for pickled pork, cabbage, tomatoes, onions, and ham stock. The second one uses slat pork or bacon, haricot beans, onion, potato and cabbage. The third recipe calls for bacon, split peas, barley, leeks, carrots, tunips and cabbage. Can post any of them if you are interested and you could substitute the ham for the bacon.

Susan, I checked out the link for the tavern. Wow, what a place! I wouldn't care what i ate there, just being there would be enough. NO, WHO AM I KIDDING? THAT WOULDN"T BE ENOUGH;) The pot pies sounded wonderful. If youn get ahold of the recipe for the soup, would share it? Vicky

I just looked at your post and you said it was a broth, not cream or tomato. Was it a little thick? I am wondering if it was a roux mixed into some cabbage broth? Vicky

This soup sounds like something I would really like. If no one posts the recipe (and it appears no one has it) perhaps you could write to Bon Appetit and have them request the recipe for you.

Susan, I was browsing Recipe Source and I came across these 2 soup recipes. Probably not the same, but it might provide the base for the soup and your additions. The numbers for the soups are: 417 and 423. Vicky There are many , many recipes for soup. Vicky

Well, I tried e-mailing City Tavern but the link on their web site isn't working. I'll probably just try to come up with a recipe on my own. If I have success, I'll share the recipe.
