I need to bring something to a potluck at work tomorrow and was wondering if any one had any good ideas. Some stipulations - No desserts. Light. Can't be warm unless it can be heated in a small microwave or kept in crockpot. Not too complicated. OK, any ideas? Thanks!
Cocktail meatballs with their sauce, keep warm in a crockpot really well. Just have toothpicks on the side.
Or, how about a veggie pizza. Use crescent rolls for crust, top with a spinach dip and chopped veggies. It's a great cold appetizer.

How about the CL Black Bean Taco Salad? I made that for company and they really liked it. I would just keep the dressing separate and put it on at work. Bring some WOW tortilla chips! Taste just like the real thing.

I've made the Peanutty Noodles for pot lucks at work because it can be served at room temperature. It worked out really well, and everyone raved about it. Good luck.

how about spinach dip! if you buy the KNORR dry vegetable soup mix (green and yellow box) on the back of the box is a spinach dip recipe.. it is a hit everywhere i bring it but i modify the recipe this way..
for mayo i use miracle whip LIGHT
and for sour cream i use TILLAMOCK FAT FREE!
**** and only 1 cup of each not 16oz
and i add about 2 tbsp lemon juice!!!
so it turns out to be pretty lowfat and is light and cold and OH SO GOOD!!! guaranteed to be a hit!

Tell me about Peanutty Noodles... could you post the recipe please? Is it from CL? If so, I wonder how I could have missed it- sounds yummy!

The Peanutty Noodles are indeed a CL recipe and they're wonderful! I'm at work (oops) and don't have the recipe but it you try the search feature at the top right of the screen you can find the recipe easily. As a keyword, just enter Peanutty. Click on the first recipe that comes up and scroll down a bit and the recipe is there. Fair warning: It makes a HUGE recipe. It's soooo good.

Peanutty Noodles

2 carrots -- peeled
1 tablespoon vegetable oil -- divided
2 teaspoons grated peeled fresh ginger
3 garlic cloves -- minced
1 cup fat-free -- less-sodium chicken
broth
1/2 cup natural-style peanut butter (such as
Smucker's)
1/4 cup low-sodium soy sauce
3 tablespoons rice or white wine vinegar
1 teaspoon chili garlic sauce (such as Lee Kum Kee)
1/4 teaspoon salt
Cooking spray
2 cups red bell pepper strips
1 pound snow peas -- trimmed
8 cups hot cooked linguine (about 1 pound
uncooked pasta)
1/2 cup chopped fresh cilantro
1. Shave the carrots lengthwise into thin strips using a vegetable peeler, and set aside.
2. Heat 1 teaspoon oil in a small saucepan over medium heat. Add the ginger and minced garlic; saute 30 seconds. Add chicken broth and the next 5 ingredients (broth through salt); stir until well-blended. Reduce heat, and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm.
3. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over
medium-high heat. Add bell peppers and snow peas; saute 5 minutes or until tender. Remove from heat. Combine carrot, peanut butter mixture, bell pepper mixture, and linguine in a large bowl; toss well. Sprinkle with cilantro. Serve warm or at room temperature.
Yield: 10 servings (serving size: 1 cup).

Serving Ideas : Add shrimp for a more filling main dish.
NOTES : This dish comes together quickly when one person prepares the sauce while another sautes the vegetables. Break the pasta in half before cooking to make serving easier. These noodles complement the pork perfectly, but they also become their own main dish when you add cooked shrimp or chicken.
