I have to tell you that Raspberry Balsamic Chicken is absolutely the BEST - you've got to try it - I had just received the Complete Cookbook and it was the first chicken recipe I looked at - tried it last night - definitely 'high end' and easy - soooo good!

Raspberry-Balsamic Chicken
1 tsp. veg. oil
1/2 cup chopped red onion
1 1/2 tsps. minced fresh or 1/2 tsp. dried thyme
1/2 tsp. salt, divided
4 oz. skinned, boneless chick breasts
1/3 cup seedless raspberry preserves (where are they?????)
2 Tbsp. balsamic vinegar
1/4 tsp black pepper
 
Heat oil in a large nonstick skillet over med-high heat until hot. Add onion, sauté 5 minutes.  Sprinkle thyme and 1/4 tsp. salt over chicken. Add chicken to pan, sauté 6 minutes on each side or until done.  Remove chicken from pan, keep warm.
 
Reduce heat to medium.  Add 1/4 tsp. salt, preserves, vinegar and pepper to pan, stirring constantly until preserves melt.  Spoon sauce over chicken and serve immediately.  Yield 4 servings.

Thanks Buddie - was just going to post - and I did find the 'seedless' jam/jelly - and it was E.D. Smith - I thought I would have to go into a gourmetish thing - but there it was and I am in Canada - where of course - we don't get all the good stuff most of you do!

For the seedless jam I just use Sorrell Ridge 100% Fruit. It should be right next to the jelly and peanut butters in your local supermarket. I get mine at Vons but I'm sure you can find it at most major chains.

The raspberry balsamic chicken is great! Thanks for reminding me about it -- I made it when the recipe appeared in the magazine (whenever that was) and my family raved! Took me some looking to find seedless raspberry preserves - first found only seedless raspberry jelly and raspberry preserves with seeds, but one of the more "gourmet" brands had seedless preserves.

This recipe is exactly the same as a Blackberry Balsamic Chicken recipe I pulled out of a magazine some time ago, except for the flavor of jam, obviously. I have to say it was definitely one of the easiest recipes ever, and VERY tasty. I had no idea CL had this one; I have the 5 Star and 1999 and 2000 Annual cookbooks, as well as countless editions from past years. I'll bet it is even better with the 100% fruit spread!

I have a variation of the same recipe using orange marmalade and a teaspoon of Dijon mustard instead of the raspberry. Just as good also!
