I was looking through the Sept. issue and this caught my eye. This was my favorite dish when I was in Italy many years ago. Has anyone tried it?

Laura,

Here is a review from one reader on one of the Sept. review threads. Sounds positive! I also found another, less enthusiastic review. So the jury seems to be out on this one.

Mrs. Reber,
I have made the farfalle carbonara twice already, since it was very easy to prepare and my family and I loved it. There is only suggestion I would make. When you add the eggs to the pasta, make sure your heat is not too high, since the sauce could become the texture of scrambled eggs. This happened the first time I prepared it. Luckily, the taste was still good. Enjoy!

I tried the Farfalle Carbonara last night and was disappointed. I used spaghetti instead of farfalle because that's what I had on hand. It was very easy to make but I thought very bland. Perhaps I'm not a great judge for this dish, both my husband and I are not big alfredo type sauce people. This could also be why we didn't like the Penne w Zucchini and Ricotta last month. Please let me know when others give this recipe a try! On to something else new, plenty of material in Sept. issue. Thanks.

Thanks Natasha, I have everything on hand so I think I will give it a try and maybe try to spice it up a little. I will post my review tomorrow.

How do you suppose this would be substituting chicken (I don't eat red meat)? The recipe caught my eye this weekend as well!

Well I made this last night and I thought the flavor was great, but the notes about this recipe are correct. It really does lose its creamy texture as soon as it cools down. For that reason, I don't know if I will make it again. Rustysmom - are you talking about substituting chicken for the bacon? If so, it might be a little bland. I would use turkey bacon if trying to avoid the bacon.
