Hi there,
It's been a while since I've been here. Hope all are well.
I have a block of parmesan cheese in my fridge. It's a few weeks old and already it's gotten mold (greenish blue kind) on the sides.
My question is WHY? The last time I bought a block of parm, I had it forever, using it until it was too small to hold onto to shred, and I never had molding problems.
I cut off the mold and returned it to the fridge, but I'm hoping it doesn't come back. I've kept it in it's original plastic, then put it in a ziploc bag. Should I do something different?

I was advised by the owner of a specialty store that sells cheeses that cheese in general goes moldy faster if left in its original wrapper after opening it the first time. Their advice was to re-wrap it in plastic wrap after opening it, and use new plastic wrap after each successive use. Plastic wrap is preferable to zip lock bags, because there is air circulating around the cheese in the bag which will speed up the molding. Hope this helps.

Thanks! I had a feeling this might be the case, since that was the only difference from how I kept the cheese before. I'll try it!

Thank you for that info on wrapping cheese. If I see moldy cheese, I throw it away.

I wrap my cheese in wax paper first, then either a glad wrap or zip-lock bag.
Hard cheese you can simply cut away the mold...remember cheese is made with mold innoculations...not all mold is bad :D
Soft cheese they recommend dumping...
