I know...it's not light...
does anyone know if you can freeze heavy whipping cream and still have it be whippable?

Yes! You can! I subdivide my whipping cream sometimes and freeze it for special nights, and have never had a problem getting it to whip.
Defrost in the fridge, though....don't nuke it.

Would it work if I whipped the cream fully, pipe it into stars on parchment and then freeze? Would it hold it's shape (star) when thawed? Is the flavor or texture compromised?
