Does anyone have this recipe. I made it last fall and loved it but have not been able to unpack all my old CL magazines since my move and can't find it in the recipe finder. Thanks in advance if you can post it! It is very chilly in Colorado Springs today and this soup sounds great for dinner.

I made this soup over the weekend too. Left out the jalepeno and the bell pepper as I don't care for those. To those who add the jalepeno - does it add any flavor or just a little heat? If only heat I might try it next time - but I just don't really care for the taste of most peppers.
I did add a whole can of black beans - wasn't sure what I'd do with the 1/2 can leftover. And I also added more than 3/4 c sweet potato - I just went ahead and used a whole medium size one - didn't want to waste the left over. Also - I only had boneless/skinless chicken thighs in the freezer so I used those instead.
With my additions it seemed a little too chunky - more a stew like consistency - so I just added chicken broth til I got it where I wanted it.
All in all, I thought it was really good and will definitely make it again. Thanks to all who have posted their enthusiastic reviews. I would never have given this a second thought due to what I considered a "weird combo" of ingredients - but it's great.

I think the jalapenos just add heat. I actually love the flavor of jalpenos but I don't recall tasting them in this soup. I mince mine so small that they would be difficult to taste with all the other great flavors. I also leave out the green bell pepper. Can't stand cooked green pepper. I think my soup is thicker than a traditional soup as well but I love the flavor and make this soup often.

I just wanted to add another vote for the African Chicken-Peanut soup. I made it last night and had it for lunch today. It was wonderful. I made it w/o the cumin (because I was out) and I used some leftover frozen beans from the freezer so I think it had more beans than called for, but it's a keeper for me.

Another thumbs up for this recipe! Made it a bit ago (and added a whole can of beans, but oh well) and my husband loves it. He keeps requesting a repeat http://www.cookinglight.com/bbs/smile.gif so I think I'll make it again this week. I couldn't stop sampling it while it simmered.

bringing up an old thread... soup season is here! i tried the african peanut chicken soup tonight- thumbs up!
it was really easy to throw together, even with cooking the chicken breast & all the chopping, it was done in about 30 minutes.
i love peanutty flavors in foods- so this was a treat for me. it was flavorful but not spicy-hot. so if you want more heat, use the whole jalapeno, more garlic, hot salsa & a dash of cayenne or something similar. i wasnt in the mood for spicy tonight, so it was fine for me as is. also i think the flavors will blend together nicely & get a little hotter after it sits for a few hours or overnight in the fridge.
my only complaint is the potential waste of ingredients here. if you follow the recipe like it is written, you will have leftover: half a can of black beans, half of a jalapeno, half a red bell pepper, 3/4 of a sweet potato & 3/4 of an onion. seems a little wasteful to me. so plan on either making a double batch of this soup to use up the leftovers, or incorporate these items into another recipe.
but other than the leftover ingredients, this soup was very tasty and quick & easy (which i like) & i will be putting this in my soup file. :D

African Chicken-Peanut Soup

Vegetable cooking spray
3/4 cup sweet potato -- peeled and cubed
1/4 cup onion -- chopped
1/4 cup red bell pepper -- chopped
1 medium garlic clove -- minced
1/2 medium jalapeno chile pepper -- seeded and minced
1 cup cooked chicken breast halves -- chopped
1/2 cup salsa
1/4 teaspoon ground cumin
1 16-ounce can chicken broth
1 15-ounce can Healthy Choice Chicken with Rice Soup -- undiluted
1 15-ounce can black beans -- drained
3 tablespoons peanut butter
1. Place a large Dutch oven coated with cooking spray over medium high heat until hot. Add sweet potato, onion, bell pepper, garlic, and jalapeno; saute 5 minutes.
2. Stir in chicken and next 5 ingredients (chicken through beans); bring to a boil. Reduce heat; simmer 10 minutes. Add peanut butter, stirring with a whisk; cook 2 minutes.
Yield: 6 servings of 1 cup each

I believe the recipe being posted has been halved. That is why it seems it calls for "waste" of ingredients. I just think more people are likely to make 6 servings than the 12 servings the original recipe made.
