I had such awesome luck with the white bean/chicken chili recipes, I thought I'd try it again! I'm looking for a recipe that uses acorn squash. I have never used it and would like to try something new. I have heard it's good stuffed, or used in dishes. I'm open, so if you have a good recipe, let me know. may favorite way to eat acorn squash came from the sticker you sometimes find on them.. basically you stick it in some water in a microwave safe dish and microwave until soft (i don't remember how many minutes 15?) then you scrape out the pulp and mash butter and brown sugar in w/ it.. yum, yum.

I like it that way, too... but asked the same question a while back. It's another thread called "acorn squash"--hunt for that under the search feature in the upper right hand corner and you'll find lots of ideas.

I also cook mine in water (I cut the top off and place them open end down in a pan of water), just enough water to cover approx. 1/2 inch of the squash. When tender, I add butter and brown sugar. I usually place some butter and brown sugar inside of the squash and place the whole thing on the plate.
I have not made this in a long time- thanx for reminding me!!

This is a good and easy acorn squash recipe. Cut squash in half, scrape out seeds. Put cut side down on a microwave-safe dish. No water used. Microwave on high about 12 minutes. Take out and sprinkle with a little salt. Dice one apple. Add 2 to 3 tbls sugar, and few dashes cinnamon. Add a tbls walnuts and diced celery. Fill cavities of squash with this mixture and return to microwave for 5 minutes, covered with a lid or plastic wrap.
