I know there was at least one post asking about egg substitutes and I wanted to put this there, but I can't find it now. Anyway, I wanted to post this tidbit that I found:
"You'll notice that some of our recipes call for eggs or egg whites. Here are two possible egg substitutes.
Egg substitute #1:
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons flour
3 tablespoons water
Whisk all the ingredients together until a foam is achieved.
Egg substitute #2:
Another option is applesauce. Make sure you use unsweetened applesauce
when substituting it for an egg.
Generally, both are fine for baking purpose, but remember to add a
little baking powder if using the applesauce. For cooking purposes,
the applesauce is probably best if you're looking for something to
hold your ingredients together--for example, veggie burgers. "
