Okay, I read all the great reviews of this dish and made it tonight. I must say we were not bowled over. The chicken was tender and yummy, as pounded and breaded chicken generally is, but other than that, it just tasted like cooked peppers on top of breaded chicken. No particular zing. Hmmm. I even opened up a top quality Williams Sonoma balsamic vinegar just for the occasion! Did anyone else not enjoy this dish or am I alone here (I am guessing I am in the minority.) Plus the sauce really didn't seem to be much quantity or add anything. Maybe I did something wrong.

I really liked the different flavors and textures of the peppers, raisins, almonds and balsamic vinegar. But there are lots of things most people think are wonderful that I don't...to each his own I guess.

What did you serve as a side dish? I served some chicken flavored rice the first night but didn't have any left over for the left over chicken. I do remember thinking it wasn't as good without the rice. Who knows?

Beth, you're not alone. I too was not "bowled over". I prefer the Raspberry Balsamic Chicken - less work and, IMHO, better tasting!

I am looking for a Riceipe for Chicken roasted in Balsamic vinagar with a spicey sauce made with Buttermilk and sour creame

I didn't care for this recipe, either. The chicken itself was good, but I'm still trying to develop a taste for balsamic vinegar. Not quite there yet!

You may not be liking Basalmic Vinegar because of the type you're buying. If you bought it at a grocery store, the "Basalmic Vinegar" is just red wine vinegar with some color and maybe flavor added. Yuck! You really have to spend at least $10/250mL to get "true" Basalmic Vinegar, and it's usually only available at specialty shops. (BTW-Did you know that you can spend $250-400 on a bottle (less than 1L) of true Basalmic Vinegar that's been aged for 10 yrs. or more?)

"Fine Cooking" had a great article about Basalmic Vinegar a few months ago.

Julie O, do you have a brand(s) to recommend? I was just at CostCo on Saturday and there was actually a sample station for some balsamic vinegar (funny no back up there). I would love to go to a balsamic vinegar tasting so I could compare different brands!

As I noted in my original post, I used high quality balsamic vinegar. I am not sure what is cost, but my brother and sister and law gave it to me for christmas last year, so I imagine it wasn't cheap. It took me some time to pry the wax seal off the cork.

And I love the taste of balsamic vinegar, I guess my complaint with this dish is that it didn't seem to blend. It was just breaded chicken with balsamic peppers on top. Hmmm.

This dish is one of my favorites. I serve it with Herbed Basmati Rice. The recipe is from Cooking Light. Everyone has their own preferences-that's what makes life interesting!

As far as the recipe goes, I agree that it doesn't blend all that well together. I just happened to really like the parts, especially the peppers. I have though about making the peppers on their own as a side dish, but haven't done it yet. I am relieved to hear someone else say that the sauce didn't add much flavor or quantity-wise - I thought I must be doing something wrong.

As for balsamic vinegar, I absolutely love it, and have found that the Colavita brand is really good. I get it at the grocery store. I haven't ever splurged and bought the expensive kind. Maybe I'll put it on my Christmas wish list! Would love some recommendations.

FYI Carolyn.1,
If you want to find out information about where someone is from, you just have to click on the little face like-icon to the right of their name. That takes you to their profile. The profile, if it's filled out, has the person's geographic location, email address, webpage and interests. It's a neat way to see where everyone is from. Some folks don't have it filled out. To edit your profile, you can change it by clicking on the profile link in the upper right hand corner of this page. Just thought you'd like to know some of the nice features of this BB. And yes, she is from SC as I discovered from her profile. http://www.cookinglight.com/bbs/smile.gif Kendra
