View Full Version : What to serve with Chipotle Grilled Shrimp?
I am going to make the Chipotle Grilled Shrimp that Vanessa posted (see http://www.cookinglight.com/bbs/Forum1/HTML/001338.html) for a special dinner to thank a couple for all they do for my family. They love spicy food.
Do you all have any ideas as to what to serve with the shrimp?

I don't have any "out of this world" suggestions, but I would suggest making the shrimp the star and serving it with simple side dishes since it is a bit spicey. I served it with rice (to counteract the heat) and I think green beans. I do my green beans very simply by stir frying them with a little olive oil, garlic and sprinkling a bit of Parmesan cheese on them. What you serve may also depend on if you are having appetizers or not. If you are serving appetizers, then keeping dinner pretty simple would avoid over-stuffing everyone.
Thanks Lindrusso. I think that I will make rice and I was thinking of some sort of salad greens with citrus. Either the Field salad with sugared pecans or I have a recipe with oranges, bluecheese, pecans and red onion soaked in red wine vinegarette. Since you have made the shrimp before, do you think this sounds good? I am going to make salmon quesadillas for an appetizer.
