View Full Version : Rev: Smoked Chicken and Red Pepper Sauce

This is an old recipe that I found somewhere on this BB. I made it last night for dinner and it was fast, and easy, and tasted great! This would be a great dinner for those of you on WW. It's really low in points!

I made a couple tweaks, to accomodate the ingredients that I had on hand:

1. I used minced jalapenos instead of chipotle peppers.
2. I also threw in some chili garlic sauce, so I probably had a lot more garlic in the finished product than it called for. YUM!


I would even serve this over noodles or rice if you are looking for sides. I had it with a baked sweet potato.



Ingredients
2 bacon slices
4 (4-ounce) skinned, boned chicken breast halves
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped red onion
1/2 teaspoon ground coriander
3 garlic cloves, minced
1 drained canned chipotle chile in adobo sauce, diced
1 cup salsa
1 (7-ounce) bottle roasted red bell peppers, drained and sliced
Chopped fresh cilantro (optional)


Directions
Prep Time: 15 minutes
Cooking Time: 25 minutes

Cook bacon in a large nonstick skillet over medium-high heat until crisp. Remove bacon from skillet; crumble and set aside. Sprinkle chicken with salt and black pepper. Add chicken to bacon drippings in pan; saute 2 minutes on each side. Remove chicken from pan. Add onion, coriander, garlic, and chile to pan; saute 3 minutes. Stir in salsa and bell peppers. Return chicken to pan. Cover and cook over medium heat 12 minutes or until chicken is done. Sprinkle with crumbled bacon; garnish with cilantro, if desired.

I really like this one too. If you liked this one, you might want to try the Chunky Chipotle-Chicken Chili from July 2000 (I think it's been posted on this board). It's very similar. I highly recommend trying it with the chipotle if you get a chance - it gives the dish a nice, smoky taste.

You might want to try some of the other easy chicken recipes from the Smoked Chicken article (March 1999). These include a Smothered Chicken in Mushroom Ragout, Sauteed Chicken with Cherry Port Sauce, and Simmered Sicillian Chicken -- all easy and very good.
