Hi!
I saw that Lindrusso's Easy Chicken Santa Fe. Someone had commented that 5 to 6 chicken breast halves was a bit much. Should I just add extra beans and corn to the recipe rather than cutting back on the chicken?

Hi there. I think it's really a matter of personal preference. There are only four of us, so I just don't need all that chicken. I think I use 3 breast halves (4 at the very most) with this recipe and I like the ratio. I think I usually throw in an extra can of beans - I just like less meat and more beans! :)

If you want to use the six breast halves, you can up the beans and corn, but you might want to up the salsa a bit too to make sure there's enough liquid.

This recipe does not require the ingredients to be exact, so I'd just eyeball it!

Thank you for the quick reply. We are having people over for dinner so I did not want to cut back on the meat! I can't wait to try it!

lindrusso: I want to make this dinner! I don't own a crockpot. How do you suggest I cook it??? Have you ever tried any other method of cooking this??? I'm going to a "girl's night" February 1 and would love to bring this. Thanks!

Leonard, I've made Linda's chicken on top of the stove, a quick version minus the cream cheese and in the oven and they've each come out as well as in the crock pot.

Hi! :) Here's what I would do:

I would first cook the chicken breasts in a skillet with a little oil - usually about 6 minutes on each side. Then remove the chicken and cut into cubes (cooking first, before cubing, should keep the chicken from drying out). Then I would add the salsa to the pan, along with the corn and beans and heat through. Once this mixture is heated through, add the cream cheese and stir until melted. Then add the chicken and heat through again. Still pretty easy and only uses one pan!
