Does anyone have a good low-fat recipe for sugar cookies? I have a few recipes for this but they are all loaded with fat!
Also I am looking for a good icing to go on top of these. Thanks

No I don't, so what I'm about to write might not be someting that will work. Better cooks than I am can tell you if this will work or not.
Having said that, maybe applesauce might work to hold down the fat.
I know Apple Sauce works good in Cakes, Muffins, and Breads, and I'll bet that if you look at your recipes you might find a cookie recipe where you might be able to substitute some, not all, of the fat with Apple Sauce.
Well I will be checking in on your topic to see what others have to offer.

Hi Andrea,
I haven t tried these, but they are low-fat and from Cooking Light:
Basic Icebox Sugar Cookies - Cooking Light Dec. 1997
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons stick margarine, softened
2/3 cup sugar
1 teaspoon vanilla extract
1 large egg white
cooking spray
1. Combine the first 3 ingredients in a bowl, and set aside. Beat margarine at medium speed of a mixer until light and fluffy. Gradually add sugar, beating at medium speed of a mixer until well-blended. Add vanilla and egg white, and beat well. Add flour mixture, and stir until well-blended. Turn dough out onto wax paper, and shape into a 6-inch log. wrap log in wax paper, and freeze for 3 hours or until very firm.
2. Preheat oven to 350 degrees.
3. Cut log into 24 (1/4-inch) slices, and place slices 1 inch apart on a baking sheet coated with cooking spray. Bake at 350 for 8 to 10 minutes. Remove from pan, and cool on wire racks. Yield: 2 dozen.
Calories: 59; fat 2 g; protein 0.7 g; carbs 9.6 g
There is also a recipe for lemon-frosted sugar cookies in the Dec. 1998 issue, by the way. The Dec. 1999 issue may also have a sugar cookie recipe - I don t have it here at the moment so I can t check...

Natasha- Could I use that recipe with cookie cutters? I am going to use Halloween cookie cutters to make it look cute and festive, so the cookie recipe also has to work with that.

Hi Andrea,
Yes, you can form slice-and-bake cookie dough logs (to be cut and baked) into different shapes. But it s not the easiest thing depending on the shapes you want. Moreover, if you want to make, say, four different shapes, you will need to divide the dough in four and shape four separate logs. All in all, I think you are likely better off using the other recipe I mentioned, which is a roll-and-cut type. (You can always adapt the icing if you want - maybe make orange-frosted and chocolate-frosted ones for Halloween?) Unfortunately, the recipe is quite long to type out and I am so so lazy at the moment. Could some kind Mastercook-owning soul please post the Lemon-Frosted Sugar Cookies? Lemon-Frosted Sugar Cookies

INGREDIENTS FOR 20 SERVINGS:
Cookies:
1 cup granulated sugar
1/2 cup stick margarine or butter, softened
1 large egg
1 large egg white
1 tablespoon fat-free milk
1 teaspoon grated lemon rind
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup toasted wheat germ
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
Icing:
2 cups powdered sugar
1 tablespoon fat-free milk
1 tablespoon fresh lemon juice
1/4 teaspoon vanilla extract
Food coloring (optional)
Assorted sugar sprinkles (optional)
INSTRUCTIONS:
You may want to start this recipe early in the day because the dough requires
at least 4 hours to chill.
1. To prepare cookies, beat granulated sugar and margarine in a large bowl at
medium speed of a mixer until well-blended (about 4 minutes). Add egg and next
4 ingredients (egg through 1 teaspoon vanilla), beating well. Lightly spoon
flour into dry measuring cups; level with a knife. Combine flour and next 4
ingredients (flour through salt). Add flour mixture to sugar mixture, stirring
well. Spoon dough onto plastic wrap; flatten to a 1-1/2-inch thickness. Cover
tightly with plastic wrap; chill 4 hours or overnight.
2. Preheat oven to 400 degrees.
3. Roll dough to a 15 x 12-inch rectangle on a heavily floured surface. Cut
dough into 20 (3-inch) squares using a sharp knife. Place cookies 2 inches
apart on ungreased baking sheets. Bake at 400 degrees for 8 minutes or until
golden. Immediately remove cookies from pans using a wide spatula, and cool on
wire rack.
4. To prepare icing, combine powdered sugar, 1 tablespoon milk, lemon juice,
and 1/4 teaspoon vanilla. Stir in food coloring, if desired. Spread about 2
teaspoons of the icing over each cookie, or place icing in a small zip-top
plastic bag. Snip a tiny hole in one corner, and drizzle icing over cookies.
Sprinkle with assorted sugar sprinkles, if desired. Yield: 20 cookies (serving
size: 1 cookie).

I have all old CLs and also MasterCook but you must have your title and/or issue wrong....no such lemon-frosted cookie recipe can be found. If you correct your source I will post it for you.
