View Full Version : Review: Texas Sheet Cake

I just made the CL Texas sheet cake recipe (March 2000) hoping to take it to a potluck and was really disappointed... I made it in a jellyroll pan, following the directions (in fact, cooking it for one less minute), but the bottom burnt and I barely had enough icing to cover the cake. I ended up making some cookies to take instead...

I wonder if I lined my pan with parchment paper and doubled the icing if it would be any better the second time...

Did anyone else have similar troubles? So far I think I've read nothing but good about this recipe so maybe it's me. Also wondering if--since my mom makes the full fat version--I was expecting too much from a light recipe. Did those who gave the rave reviews ever have the "real" Texas sheet cake before?

Oh, that's too bad that it didn't turn out. Yes I've had the real thing. In fact, I just made the CL version twice in the last month. The only things I can suggest are (1) check the size of your pan. The frosting is ample for the cake but it wouldn't be enough if the pan was bigger, (2)check your oven temperature--that could cause the bottom to burn. Maybe your oven rack is too close to the bottom. I put mine in the middle of the oven.

I wait to start the frosting until after I take the cake out of the oven. Pouring the hot frosting on the hot cake didn't work for me. The frosting all ran to the sides and there wasn't anything in the middle--a real mess. By letting the cake sit a bit (5-10 minutes) the frosting stayed put when I spread it around.

Gee, I hope you try it again some time. It is really good. I do remember cutting the cinnamon to 3/4 teasp. The first one I made I could taste the cinnamon and I didn't want that. 3/4 teasp is just right for me.

if I can remember correctly I made this cake in a 13x9 cake pan. I took it to work to share since i live alone. Everyone devoured this cake fast. I thought it was terrific!

I'm going to fess up now so the cake doesn't get a bad reputation... Just checked my jelly roll pan and it was larger than the dimensions called for... Norma was right.

Which is good cause I will make this recipe again... I cut off ample amounts from both ends and tried the cake in the middle and it was excellent--just like my mom used to make http://www.cookinglight.com/bbs/smile.gif
