Tonight was our official 'country' of the month night. This month my husband tried to challenge me with the midwest. But I think I pulled through!
The menu was a midwestern meatloaf and a blu cheese potato gratin. The gratin did not work out too well, so I am not posting that (although if anyone is interested, let me know and I am happy to post). The meatloaf, on the other hand, was great.
Midwest Meatloaf

2 lbs. ground beef
1 small onion, chopped
1/2 red bell pepper, chopped
2 cloves garlic, minced
1 c fresh bread crumbs
2 eggs, lightly beaten
salt and pepper
2 tsp. chili powder, optional
3/4 c. ketchup or tomato sauce
2 tbs. mustard
1/4 c chopped fresh parsley
4 slices bacon
Preheat oven to 350. Combine all ingredients in a large bowl and mix well. Gently mound the meat mixture into a 9 by 5 loaf pan. Top with 4 strip of bacon. Bake for 1 hour and 10 to 20 minutes. REmove from oven and let set for 15 minutes before slicing.
I made a few changes-I used 1 1/4 lb ground turkey breast, 1/2 lb. ground beef and about 1/4 c. oats. I also changed the 2 eggs to 2 egg whites and 1 eggs. The bacon became turkey bacon and I added about 1 tsp. chipotle powder (we love Penzey's!).
I will definitely repeat this one! Enjoy!
