I am looking for things to do with mahi mahi. I just bought some at Costco.

This probably won't help a bit. We bought some too and I just sprinkled Penzey's Northwoods Fire on it and cooked it on the stove top. I thought it was awesome. Usually when I order mahi mahi out it is blacked or cajun.

RobinC posted this recipe last week. I made it last weekend with mahi mahi. It was simle to make and delicious. Although I put them under the broiler and not in the skillet.

Greek Tuna Steaks
CL March 2001

1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried
oregano
1 teaspoon olive oil
3/4 teaspoon chopped fresh or 1/4 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tuna steaks (6 ounces, each; about 3/4
inch thick)
Cooking spray
4 lemon wedges

Directions.
The combination of Mediterranean flavors works equally well not only with the tuna steaks in this recipe, but also with striped bass or red snapper fillets. Serve with couscous mixed with feta cheese, sliced black olives, and chopped tomato.

1. Combine the first 5 ingredients in a small bowl, and rub evenly over the tuna steaks. Cover tuna steaks, and marinate in refrigerator 15 minutes.

2. Heat a large grill pan coated with cooking spray over medium-high heat. Add the tuna steaks, and cook for 5 minutes on each side or until steaks reach desired degree of doneness. Serve tuna steaks with lemon wedges. Yield: 4 servings (serving size: 1 steak).

Pacific Rim Marinated Mahi-mahi (or salmon)

1/4 C soy (I'm sure reduced sodium would work well)
2 T chopped green onion
1 T Splenda
1 T minced fresh ginger (I didn't have any, so I used 1/2 tsp ground ginger)
1 T minced garlic
4 mahi-mahi or salmon fillets, 6 oz each

Combine all ingredients in a ziplock baggie and allow fish to marinate in the fridge for at least an hour. Grill or broil, basting with marinade when you turn it over.



This recipe came from a low-carb cookbook, and it's fabulous! Using Splenda, you'd never know you weren't using a bottled teriyaki sauce.

I bet you could use that other recipe that everyone was raving about --the steamed one...I made that this weekend and it was awesome!!
(though DH thought way too much ginger..not sure if 3 TBS was a typo and should be 3 Teaspoons...??)

Costco has Mahi Mahi? Tell me more! Is it in the frozen foods section? I've missed it!!!

The mahi mahi that I bought was fresh. We had it tonight for dinner and it was delicious.

After the wonderful suggestions that you all sent, I just ended up marinading in Yoshida's cracked pepper sauce.....and grilling. It was truly wonderful. Next time I am going to find this recipe for a mahi mahi with a mango chutney sauce. That one sounded good for tonight too, but it required a trip to Trader Joes that we just didn't have the time for.
