View Full Version : Hay Day Peasant Bread

For years I have flipped through my copy of the Hay Day Market Cookbook, enjoying the prose more than the recipes (although the Clam and Bacon dip is to die for, but ain't nothing like light!). I sat up when BeckMs mentioned that she was grooving on the Hay Day Peasant Bread recipe...and I think she got onto it through Searcher. Anyhow, I decided to trust the judgement of my fellow BBers, and WOW! Never have I produced such a textured, flavorful bread with so little effort. For those who haven't made this treat, you make the whole thing in your KitchenAid, with the paddle, not the hook, and somehow it gets texture without a huge overnight rise .

Thanks so much for pushing me to this recipe! I think it is my new standard white bread.

If you like the white bread, you've got to try the herbed variation...the toast is to DIE for!!!

The Vermont Cheddar Chowder in that book is also excellent; I use a combination of carrots and parsnips.MMM!

I made this for the first time a few weeks ago- thanks Rebecca- it IS wonderful.

And for those of us without KitchenAid mixers, it's still a snap- just a little more elbow grease required!

I made the herbed variation using whole wheat- so tasty! THis, combined with the North Woods Bean Soup recipe from the latest CL- perfect for these chilly winter days...

I am so intimidated by yeast but have been inspired by all the rave reviews to try making this bread soon! Thx! :D I think I saw the Hay Day cookbook at the library so I will have to check it out. Becksm~ The chowder you mentioned sounds yummy!
