If you love mussels then do try this recipe. It is VERY good. I found it on the EPI site and it was recommended by 92%.
The only thing I did was increase the amounts as I was serving 6 not 4. I would definitely serve this as a meal next time instead of an appetizer (although if the analysis is correct--only on a VERY special occasion *sigh*). Would half olive oil/butter help lighten this recipe without sacrificing flavour?
I thought some minced cilantro (if you like it) would be a nice addition to the recipe.
I covered the mussels with foil to keep them hot while I was reducing the sauce. The reduction is sinful--lick your plate clean! Make sure at least one guest has CPR training and have a phone nearby to call 911!

MUSSELS WITH TOMATOES, JALAPENO AND TEQUILA

1/2 cup butter (1 stick)
5 garlic cloves -- minced
3/4 cup diced tomatoes
1/2 cup sliced green onions
1/2 cup thinly sliced celery
6 1/4 inch thick slices jalapeno chile pepper -- with seeds
1/4 cup tequila
2 tablespoons fresh lime juice
1 1/4 pounds mussels (about 40) -- scrubbed and debearded
Melt butter in heavy large pot over medium-high heat. Add garlic; saute until fragrant, about 1 minute.
Mix in tomatoes, then next 5 ingredients.
Add mussels. Cover and steam until mussels open, about 7 minutes (discard any mussels that do not open).
Using slotted spoon, transfer mussels to large bowl.
Simmer sauce uncovered until slightly reduced, about 3 minutes.
Season with salt and pepper. Pour sauce over mussels and serve.
Makes 4 appetizer servings.
