Delicious and very easy. I misread the recipe and ended up cooking the shallots and salmon together but it was good that way.
I cut the recipe in half and used less than half the butter, but the sauce still tasted rich. The mustard gives it zip and the wine makes it taste sort of sophisticated, which is not exactly a flavor, but you know what I mean. I served this with brown rice and roasted green beans.
One suggestion: I had fresh tarragon leftover from the Tarragon-Turkey Burgers, but I am not sure it added much to the dish. I would not bother spending the $2-$3 if you don't already have tarragon--flat-leaf parsley or something like that would work fine.
