Does anyone have the receipe for the Lighten Up feature from this past winter (maybe January or February??)that was for a muffin that included about a zillion ingredients, including grated carrots, apples, dates, orange zest and juice, possible walnuts or some other nut and many other things? I have stored my receipe in an over-croweded storage unit accidentally and I NEED this receipe or my life will just not be complete!

I would apprecite anyone sharing it with me!

I think you must have something wrong the way you are remembering this recipe. I really searched all of 1999 and 2000 and can't find what you want in Lighen Up or anywhere else. The closest match seemed to be "Carrot Cupcakes with Coconut-Cream cheese frosting" which was in Oct., 1999. let me know if this is it and I will type it in........doesn't seem to be available anywhere else.
I also found in the recipe search the following recipe which sounds like it might be the one.

Cranberry-Citrus Muffins
Turbinado sugar, with its coarse texture and mild molasses flavor, helps make the topping for these muffins extra-special. But granulated sugar also works well.

21/2 cups all-purpose flour
11/2 cups fresh or frozen cranberries
1 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup 2% low-fat milk
1/3 cup light ricotta cheese
1 tablespoon grated orange rind
1/2 cup orange juice
1 tablespoon grated lemon rind
2 tablespoons vegetable oil
1 tablespoon vanilla extract
2 large egg whites
1 large egg
Cooking spray
6 tablespoons turbinado or granulated sugar


Preheat oven to 400`. Combine first 6 ingredients in a medium bowl; make a well in center of mixture. Combine milk and next 8 ingredients (milk through egg); stir well with a whisk. Add to flour mixture, stirring just until moist. Spoon batter into 18 muffin cups coated with cooking spray. Sprinkle turbinado sugar evenly over batter. Bake at 400` for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
Yield: 11/2 dozen (serving size: 1 muffin).

Morning Glory Muffins

INGREDIENTS FOR 24 SERVINGS:
2-1/2 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups shredded carrot
1 cup shredded Rome or other cooking apple
3/4 cup raisins
1/3 cup chopped pecans
1/4 cup flaked sweetened coconut
1 (8-ounce) can crushed pineapple in juice, drained
1/3 cup vegetable oil
1/3 cup apple butter
2 teaspoons vanilla extract
2 large eggs
2 large egg whites
Cooking spray

INSTRUCTIONS:
Apples are too delicate to be grated with a food processor, so we recommend
using a stand-up grater. We left the skins on, but the result will be just as
good if you peel the apples.

1. Preheat oven to 350 degrees.

2. Lightly spoon flour into dry measuring cups; level with a knife. Combine
flour and next 4 ingredients (flour through salt) in a large bowl. Stir in
carrot and next 5 ingredients (carrot through pineapple); make a well in
center of mixture. Combine oil and next 4 ingredients (oil through egg
whites); stir with a whisk. Add oil mixture to flour mixture, stirring just
until moist.

3. Spoon the batter into 24 muffin cups coated with cooking spray. Bake at 350
degrees for 25 minutes or until muffins spring back when touched lightly in
center. Remove muffins from pans immediately; cool on a wire rack. Yield: 2
dozen (Serving size: 1 muffin).

Note: Muffins can be stored in an airtight container and frozen for up to 1
month. Wrap in foil, and reheat at 300 degrees.

It sounds like Morning Glory. It came in June 1999 from an Illinois reader.

It was indeed the Morning Glory Muffins!! Thank you all so much for your replys. I think I may be remembering my subsitutions of walnuts and orange juice for the pecans and pineapple!! These muffins are great and were a huge hit at my office.
