I'm sure this has been mentioned many times before, but last night I made this chicken and it was excellent! I enjoyed it a great deal.

There's something very satisfying about cooking a great meal yourself (and somehow even more satisfying that I am cooking ONLY for myself...since I'm alone, it would be very easy just to open a can of soup!)

I am finding it truly rewarding to cook great (light!) meals.
