...and I don't know what to do with it. Tonight I made mexican turkey burgers w/baked "fries." I need something different for tom. I have this for produce:

potatoes
beets
2 yellow squash
1 zuchhini
bag of spinach

<sigh>:confused:

Hmmmm.... I'm sure there's a casserole in there somewhere... Or maybe an Italian meatball soup with the potatoes, spinach and squash?

This recipe is great. and it would use your turkey and potatoes. my husband and I really enjoy it; I have made it often.

Indian Pizza

2 tbsps olive oil
1 c finely chopped onions
3 russet potatoes -- peeled and diced small
2 tsps fennel seeds
2 tsps minced garlic
2 tbsps minced ginger
1 lb ground turkey
1 tbsp coriander
1 tsp fenugreek leaves
1/2 tsp garam masala
1/2 tsp paprika or cayenne
1/4 tsp turmeric
1 tsp salt
1 c plain nonfat yogurt -- whisked
1 Mama Mary's Pizza Crust (or Boboli or whatever)
1/2 c lowfat mozzarella cheese -- grated
1/4 c parmesan cheese -- or sprinkle to taste

In a large nonstick saucepan, heat oil over moderately high heat and cook the onions until golden (3-5 minutes).

Add potatoes, fennel, garlic, ginger, and meat and cook, stirring and breaking up lumps until lightly browned.

Mix in the rest of the spices and salt and cook for another minute.

Add the yogurt slowly and stir to prevent curdling. Bring to a boil over high heat, then reduce to moderate heat and cook until sauce is thick and until potatoes are tender (10-15 minutes, depending on size of potatoes).

Preheat oven to 400. Put crust on pizza tray or cookie sheet. Spread meat sauce over crust. Cover with mozzarella and parmesan. Bake on center rack 15-18 minutes.


Per Serving (excluding unknown items): 460 Calories; 19g Fat (36.8% calories from fat); 27g Protein; 45g Carbohydrate; 4g Dietary Fiber; 68mg Cholesterol; 706mg Sodium. Exchanges: 1/2 Grain(Starch); 2 1/2 Lean Meat; 1/2 Vegetable; 0 Non-Fat Milk; 1 Fat.

NOTES :
You will have leftover pizza topping, but that is a good thing. It makes great leftovers eaten alone or with rice or on a mini boboli.

I make turkey meatballs alot and freeze the leftovers. If you have some sauce and spaghetti you can saute the squash and zucchini and throw that in and then have a simple spinach salad on the side.

Chicken Biryani


2 tsps vegetable oil
2 tsps minced ginger
2 c basmati rice
2 tbsps dried currants
2 tbsps chopped jalapeno
1 tsp turmeric
6 whole cardamom pods
4 whole cloves
1 cinnamon stick
1 pinch saffron threads
3 1/2 c water
1 1/2 tsps salt

1 tsp vegetable oil
1 onion -- thinly sliced
1 c carrot -- finely chopped
1 tbsp minced ginger
1 tbsp minced garlic
1 1/2 lbs boneless skinless chicken thighs -- fat trimmed, cut into 1/2"-wide strips
1 tbsp curry powder
1 c plain nonfat yogurt -- room temperature

For rice: heat oil in heavy large saucepan over medium heat. Add ginger and cook 30 seconds.

Stir in rice, currants, jalapeno, turmeric, cardamom, cloves, cinnamon, and saffron and cook 1 minute.

Add water and salt and bring to a boil. Reduce heat to low, cover, and simmer until water is absorbed and rice is tender, about 15 minutes.

For chicken: Heat oil in heavy large skillet over medium heat. Add onion; saute until golden brown, about 5 minutes.

Stir in carrot, ginger, and garlic. Cook 1 minute.

Add chicken to skillet; stir to coat and season lightly with salt. Stir in curry powder.

Reduce heat to low, cover and cook until chicken is just cooked through, stirring occasionally, about 5 minutes.

Uncover, remove from heat, and let stand five minutes.

Whisk yogurt until smooth. Stir yogurt into chicken mixture.

Spoon half of rice into a 13x9 baking dish. Spoon chicken evenly atop rice. Top with remaining rice.

Cover with foil (can be prepared 1 day ahead; refrigerate at this point).

Bake dish in a preheated 350 oven until heated through, about 25 minutes.

luv2cook-one of my favorites is CL's Healthy Picadillo (Oct 2000). The recipe calls for ground round but I always substitute it with ground turkey. This is super easy and very good...it also freezes well for weeknight dinners when I get home late.

If you are not sick of turkey burgers, the Turkey Tarragon Burgers in the January issue are delicious and include zucchini.

I despise Tarragon, Jessica. I did this, tho, last night for thems who r interested:

I added half a can of chipotle in adobo
red onion
half a bunch of cilantro
1 TB of chili powder
1/2 tsp. of oregano
1/2 tsp of garlic powder
1/2 tsp. of cumin
1/2 tsp. of salt and pepper
some shredded sharp cheese
some garlic flavored bread crumbs.

When they were done, I threw some sour cream on top...these were good. And believe it or not, weren't too spicy!
