i made this discovery yesterday at Whole foods market. I love it! Yummy Yummy
it's just plain wonderful on toast with a sprinkle of raisins. If you are the one who always picks out the cashews for yourself out of a tin of mixed nuts I strongly recommend you get yourself a jar!

Since I am one of those that eats all the cashews, I have always enjoyed cashew butter - a bit pricey but worth it occasionally. I know that a few years ago the LA Times ran an article about cookies that use cashew butter/almond butter etc. I have no idea if I kept the recipes but I do remember clipping the recipes and making them. If I come across the recipes and anyone is interested I can post. (Or you might try www.latimes.com (http://www.latimes.com) and go to the food section but this would probably be in archives and there may be a fee to access.)

Okay, this is new to me...where else can I find this cashew butter or almond butter? If you have a Trader Joe's by you, that's where I have always found it. (In the peanut butter section.)

May I make a "cooking" suggestion? Watching Emeril a couple weeks ago, he MADE peanut butter for use in sandwiches. I found the recipe on FoodTV.com & imagine it could be used to make your own nut butter (cashew, almond, etc.) - just make sure you taste it along to way so you don't add too much oil, salt or sugar. The only catch is that it has no preservatives, so I suspect shelf life isn't that long. Honestly, I haven't tried it yet, but I've got the ingredients for almond butter.

EMERIL’S PEANUT BUTTER
4 cups unsalted peanuts
1/2 cup vegetable oil
1 teaspoon salt
1/4 cup granulated sugar

Preheat the oven to 350 degrees F. Place the peanuts on a baking sheet and place in the oven. Cook until the peanuts are toasted, about 6 to 8 minutes. (Shake the pan a couple of times, for overall browning). Remove the pan from the oven and place the peanuts in a food processor while they are still warm. Add the oil, salt and sugar. Process until smooth.

a little place near me called "The Nutty Girl" has a great sandwich... sliced granny smiths, cheddar cheese, and cashew butter on whole wheat... YUM!!!

Thanks for the heads up . . . my husband LOVES cashews, so I'll have to get some cashew butter. We have a Whole Foods (used to be a Fresh Fields) nearby. What are Trader Joe's and Sam's?

here is another vote for almond butter! i love the stuff - i discovered it this summer and can't get enough of it. i make banana almond butter sandwiches. good thing almonds are the healthiest nut http://www.cookinglight.com/bbs/wink.gif

Speaking of nut butters, does anyone know what's happened to Walnut Acres? They used to have the best peanut butter in the country (if not the universe), but their web site says they've temporarily suspended sales while rethinking their inventory (or something ominous like that), and their order phone line says the same thing. Have they closed down permanently? Or what? Anyone have any word on this?
