View Full Version : Country Style Ribs Recipes?

I am looking for some good Country Style Ribs recipes. Does anyone have any? I have been using BBQ sauce for years but am interested in finding a new way of cooking them. Any ideas, suggestions, are appreciated!

I don't have this recipe with me at work and I have never made it, but I kept it because Oprah raved about it as her favorite ribs- they are Quincy Jones' recipe.

You marinate the ribs in the fridge for 2 days with some veggies and spices and then bake in tin foil for 6-8 hours. Meat is supposed to fall off the bone.

I have been dying to make then. Let me know if you want me to post the recipe and I will!

This has become one of our favorites. It's from Vineyard Seasons by Susan Branch

[b]SPARERIBS AND JUICE[b/]

Pork ribs for 4 (I use country ribs)
2 cups pineapple juice
1/2 cup catsup
2 T. steak sauce
2 T. brown sugar
1 T. white vinegar
1 tsp. ground mustard
3 cloves garlic, minced

Put the ribs in a toasting pan and into a 275º oven for 2 hours. Pour off fat. Mix together all remaining ingredients and pour over the ribs. Bake for 1 hour more. Serve in a large bowl surrounded with the juice.

I have also baked them at 275º for 3-4 hours and they turned out great.

Mmm Hoosier65, that looks really good! One of my son's favorite foods is country style pork ribs.

Quincy Jones's Oven Baked Ribs

Amount Measure Ingredient -- Preparation Method

2 teaspoons spike seasoning
1 teaspoon accent® seasoning mix
1/2 teaspoon fresh ground black pepper
5 pounds pork backribs -- 5 racks
6 cloves garlic -- minced
2 large jalapeno peppers -- minced
2 large onions -- halved and thinly sliced
2 large green peppers -- thinly sliced
2 large red bell peppers -- thinly sliced
2 large yellow bell peppers -- thinly sliced

In a cup, combine Spike and Accent seasonings and black pepper. Sprinkle 1/4 tsp seasoning mixture on each side of the rib racks. In a small bowl, combine the minced garlic, jalapenos, and remaining seasoning mixture. Rub the garlic mixture on the top and bottom of the ribs. Line a large roasting (17x11) with enough foil to wrap all ribs. Spread a layer of onions and bell peppers on the top of the foil. Place 2 rib racks, side by side, on the vegetables. Continue to layer the onions and peppers and the ribs. Tightly wrap the marinated ribs in the foil and refridgerate for 2 days.

Remove the pan from the fridge and let it sit at room temperature for 30 minutes. Preheat the oven to 400.

Before placing the ribs in the oven, reduce the oven temperature to 300. Bake the foil-wrapped ribs for 6-8 hours (Quincy likes 8). Remove the ribs. Spoon off the fat from the liquid in the pan and discard, reserving the pan juices. Cut each rack into three sections and serve with veggies and pan juices, plus sides of rice and chopped tomato and cucumber salad.

I do not know- I assumed it was a name brand seasoning that could be found at the grocery store, but I have never looked since I haven't made it yet. And, there was no alternative listed next to it....

Hey...was at Whole Foods yesterday and found Spike seasoning. It's a blend of 20+ spices plus salt.

I think my local grocery has Accent....will keep you posted. I am thinking of making these this weekend. Has anyone else tried?

One of my favorite cookbooks is "1001 Lowfat Recipes", and I cannot remember the author, and it's at home! :( This guy swears by 'Spike' and I bought some a year ago at 'his' recommendation. It's good stuff, but VERY salty so you have to be light-handed with it! I worry about Accent, isn't that just MSG? Wonder if I could sub something else?

Of course if I was really worried about my health I wouldn't be planning on cooking 5 racks of pork ribs, huh? :rolleyes:

All I know is that Oprah raved about these ribs as the best ever in one issue of her magazine, so I am going to try it once following the recipe. I've never made ribs, but this seemed too easy to not try. I'm throwing caution- and fat grams- to the wind!!!

Tonight I am going to start the process and cook them all day on Sat. while working around the house. Plan on making with the sweet and spicy BBQ beans from CL. Yum!

YUM!!!

I made these last night for guests for dinner and everyone loved them. They literally fell off the bones. All the fat cooked off as well, so they were very tender and juicy, but not fatty at all.

I cooked them for 8 hours....I was disappointed that the veggies has disintegrated by that time and the pan juices mentioned in the recipe were all burnt to a crisp (good thing I lined the pan with foil!), but they were still delicious. We served BBQ sauce on the side, but just the spicy flavor of the meat was good on it's own. Next time, I would consider cooking for a shorter time and then, about 45 minutes before done, I would sauce them with a little bbq sauce to make a more traditional style ribs.
