HEY! I am looking for new ways to cook SALMON.I have to admit, I am not a HUGE fan of Salmon, but I do not eat any other meat so I am searching for new ways to cook the fish.Do you have any recipes for Teriyak Salmon? Any other ideas are greatly appreciated too! ~ Thanks!:p :rolleyes:

OMG, this is sooooooooooo good!!
Pacific Rim Marinated Mahi-mahi (or salmon)
1/4 C soy (I'm sure reduced sodium would work well)
2 T chopped green onion
1 T Splenda
1 T minced fresh ginger (I didn't have any, so I used 1/2 tsp ground ginger)
1 T minced garlic
4 mahi-mahi or salmon fillets, 6 oz each
Combine all ingredients in a ziplock baggie and allow fish to marinate in the fridge for at least an hour. Grill or broil, basting with marinade when you turn it over.
This recipe came from a low-carb cookbook, and it's fabulous! Using Splenda, you'd never know you weren't using a bottled teriyaki sauce. But you could sub the same amount of sugar if you don't have Splenda or would rather not use it.

Here's a recipe from Great Tastes: Healthy Cooking from Canyon Ranch.
Salmon Teriyaki
1 1/2 pounds salmon steaks
1/2 cup low-sodium soy sauce
2 tablespoons rice or white vinegar
1 tablespoon chopped fresh garlic
1 tablespoon ground ginger
1 1/2 cups thawed apple juice concentrate
1/2 cup finely chopped green onions
1. Divide salmon into 6 4-ounce portions.
2. Combine all ingredients, except green onions and salmon, in blender container and process. Stir in the onions.
3. Place salmon in a glass baking dish and pour the marinade over it. Marinate at least 1 hour, or up to 8 hours in refrigerator, depending on flavor desired. turn salmon occasionally to distribute marinade evenly.
Preheat oven to 350. Bake salmon in marinade for 8 to 10 minutes until fish flakes easily.
I have never made this, but SIL made it for me a few years ago and I remember it being quite good.
