View Full Version : Yummy Low-Carb/Low Fat Recipes

Help! My husband is on a low-carb diet, but we BOTH like to also watch the fat. Most of the Cooking separate meals is making me nuts, and I sometimes want to make something inside rather than grilling. Any great ideas for me?

I don't think I could pick any particular low-carb recipe--there are so many! But one great way to fill up without a lot of carbs is with soup and main dish salad meals. Any soup that doesn't contain an excessive amount of potatoes or other creaming agent is great, and all soups fill you up. I think Cooking Light even reported (or was it Shape magazine?) that people who eat soup as a first course tend to eat less throughout the entire meal. For a main dish, (if the soup is just the beginning), a big salad with lots of veggies and a protein,like legumes or fish or chicken , satisfies your taste buds but doesn't pack in a ton of calories, if it's lean meat. Hope this gives you some ideas!

Speaking of soups, that Zesty Bean Gumbo thread looks mighty good!! I'm no expert on low carb diets, I just try to eat healthy. But the soup and salad idea from emilycat does sound like a good way to turn. Or to make a meal out of a vegetable casserole. Check out someone's thread on Swiss Chard. Look at the Chard, Tomato & Cheese Casserole. You could make a meal of that or anything similar. Even putting together lots of veggies you like together. You could add broccoli to the Swiss Chard casserole, I always like spinach(or something like spinach) mixed with broccoli. Best of luck! http://www.cookinglight.com/bbs/smile.gif

Hi Ruthie, how about French Onion soup without the crouton, but with low fat swiss cheese melted on it?

I have a diabetes cookbook that has some great recipes like Creole Red Snapper, Lemon-pepper Veal Chops, Fruited Cider Roast, Herbed Pork Chops, Chicken in Mustard Sauce...
These have less than one exchange for carbs plus they are low-fat and most other recipes you can just eliminate the pasta or rice. Does he use any carbs during the day? 15-20gms is usually considered one exchange. Can post any of these if you are interested.

the name of the cookbook is "Delicious Ways to Control Diabetes-Book 2", it is published by Oxmoor House (c2000).

Chicken in Mustard Sauce

1/2 tsp paprika
1/4 tsp salt
1/4 tsp coarsely ground pepper
4 (4oz) skinned, boned chicken breast halves
Cooking spray
1/4 cup dry white wine or low-sodium chicken broth
1 1/2 tbs all-purpose flour
3/4 cup 1% low-fat milk, divided
1 tbs peppercorn mustard ( or regular prepared mustard) (Note, I have only used the peppercorn or dijon mustard)

Combine first 3 ingredients; sprinkle over chicken. Coat a non-stick skillet with cooking spray; place over mediun-high heat until hot. Add chicken; cook 3-5 minutes on each side, or until browned. Remove chicken from skillet, and set aside.

Add wine (or broth) to skillet; deglaze by scraping particles that cling to bottom. Combine flour and 1/4 cup milk, stirring until smooth; add to skillet. Stir in remaining 1/2 cup milk and mustard. Cook over medium heat, stirring constantly, until thickened. Return chicken to skillet. Bring to a boil; cover, reduce heat and simmer 5 minutes or until chicken is done. Serve chicken with sauce.
