It's Friday - and probably for some of you it's time to try out new recipes http://www.cookinglight.com/bbs/smile.gif
Whenever the weekend approaches, I have visions of steaming baked goods in the morning and slow simmering stews in the afternoons. Breads and soups and every sort of wonder bubbling from the kitchen. Unfortunately for me, my house is filled with moving boxes, and I have little planned in the way of food. Maybe you can help me live vicariously http://www.cookinglight.com/bbs/smile.gif
What sorts of meals do you have planned for your weekend?

When do you move in? How frustrating!! This weekend is very busy for me, on Sat there's a Reggae Run in town in memory of a friend. So Sat is out w/ volunteering to set up then in the eve is the run/walk/party.
But...for Sunday! My goal is to make the olive crusted fish - the Oct '00 issue and a recipe from GH - Oct '00 - portobellos stuffed with potatoes and swiss chard. Nothing too complicated, but something fun for me to look forward to doing!!

We have the State Fair in North Carolina this weekend, so it won't be gourmet fare for me. HA (no pun intended http://www.cookinglight.com/bbs/biggrin.gif). Anyway, I try to watch it but somehow I always end up getting a funnel cake...and that great corn on the cob that's dripping with butter. Hmm--don't forget the beignets from last year... This could definitely be a problem for my weigh-in on Monday!

Hey Jodi, my sister is going to that fair this weekend with her family! She says the weather has been great, too! Have fun!
My husband and I have a Halloween/birthday party to go to on Saturday night. Sunday is still open, but I'd love to make chili or a stew or maybe some bbq pork sandwiches that I wanted to make 2 weeks ago! Hmm, or maybe beef stroganoff. But then, it's going to be warm, so maybe some grilled ribs are in order! I don't plan ahead too often and this week, I don't have any recipes that I'm dying to try. As you can see from my options I listed, it's still up in the air!

We are going to a friends for dinner on Saturday so I don't know what we will be having. I will be making a crisp for dessert. I am doing turkey enchiladas for dinner on Sunday and for breakfast I will probably do pancakes and waffles with fresh fruit.
This Saturday I am going to finally make Grilled Chipotle Shrimp along with CL corn saute, CL spinach salad with pomegranate dressing and crispy wontons and Paul Prudhomes basic rice. Sunday I do alot of cooking for the week. I plan to make CL orzo with chicken and asiago and the filling for oriental chicken wraps. Both are quick and easy and reheat well for lunches at work. Dinner Sunday night is a family affair and my daughter (6 years old) and I ususally cook our families Sunday night dinner. We are going to make a homemade pasta sauce and use it to make baked rigtoni. We will also make some bread, I am still working on deciding which new bread to make.

I don't cook on Saturday because that is our "going out" night and we don't usually eat a big dinner. Sunday is a completely different story. It's our free day and my hubby and I eat all the sinful, rich foods that we don't eat the rest of the week. I completely forget about CL (sorry) and reach for the butter. If it's warm like Mrs. R says, I am definitely doing ribs on the grill with a to die for apple BBQ sauce, with biscuits, corn on the cob and something chocolate. if it's cold, maybe some serious comfort food--how about New England Clam Chowder?

This weekend we are having a Tamale Party for 200 at the beer joint we own. It's a fundraiser for the town's Volunteer Fire Dept. So after making 1200 tamales, rice and beans for 200, and then cleaning up on Sunday...don't envision myself cooking anything else!

I'm planning some serious baking. My husband and I have decided to play secret Great Pumpkin and deliver Halloween treat bags to co-workers (with directions for them to do the same and keep the chain going). I've decided to make the Banana-pecan Biscotti that was posted on the ripe bananas thread for that. I'm also doing test run #2 on a pumpkin cake for my husband's halloween potluck. I'm making 2 batches CL's spicy pumpkin bread in bundt pans - inverting one to make the bottom of a pumpkin and stacking the other on top to make a 3-D pumpkin. As I mentioned I tried this a couple of weekends ago as test #1 and had a horrible time frosting it (I think I used too soft of a frosting). My office is certainly appreciating all the testing! I'll probably also make some bread too.
As for actual meals - tonight's pizza night - Thai Chicken pizza. I'm thinking about doing a Lebanese meal Sat. or Sun. with the lamb pitas and fava bean salad from the last issue.

The weather is going to be fabulous in Iowa so we're going to grill out before it gets too cold to do it anymore. Also planning on making some apple butter and canning it for Christmas gifts. Saw a wonderful idea for using this theme for gifts. Can't wait to get those aromas wafting...
Lorilei, my thoughts are with you as you unpack. Not a fun job! What's you new house like??
Runner Kim- Could you post your recipe for Thai pizza? That sounds delicious! Let us know how those pumpkins turn out.

Since I'm a stay-at-home mom, I don't really tend to cook any more on the weekends than I do during the week, though I'm sure that will change as the boys get older and more involved in activities.
I'd like to squeeze in some baking this weekend - muffins, waffles, pancakes, etc., to freeze and do some vac-packing of other items.
However, it is supposed to be very nice here in Indiana this weekend so it's time to decorate for a Halloween party I'm hosting on the 25th and clean up the yard/gardens for fall. Therefore I think I probably won't get the baking done! I will, however be making the Ladies' Fingers for a Halloween party Saturday night, as well as maybe some Peanut Butter Candy Cookies???
We'll just have to see....
Venus, Someone is going to have to help me out with the exact issue (it was from this year), but the salad was in the issue where they featured the group that did a supper club. It was part of their dinner with the pork roast and peanutty noodles, the feature also had the chive rolls and shrimp. I hope this guides you to the issue......

I don't have the recipe in front of me - its from CA Pizza Kitchen. I was able to get the description off their website.
THAI CHICKEN
This is the original! Pieces of chicken breast marinated in a spicy peanut-ginger and sesame sauce, Mozzarella cheese, green onions, bean sprouts, julienne carrots, cilantro and roasted peanuts.
The sauce uses peanut butter and isn't low fat so we use it sparingly - in fact we had some in the freezer from last time we made this pizza. It's very rich and distinctive.

venus, That Spinach Salad with Pomegranate Dressing is in the May 2000 issue, the one w/ the Lemon swirl cheescake on (yummy. Hope this helps

Well this weekend my husband is on call, so I stay home with the three kid and usually do cook. Most other weekends we do the family "things," and end up eating out(my 2 day cooking break!). However, this weekend will be different. Friday is usually my grocery shopping day, but today my husband and I spent all day in court(that's another story by itsself!!) So now the fridge has an echo in it, so there is not much to cook with. I promised my 4 year old he could make applesauce so that may be Saturday's cooking project with the kids. As far as dinner goes-whatever leftovers we can scrounge up from the fridge that is still recognizable or a quickie thrown together from the pantry. I'm just hoping the milk and O.J. make it to Monday!

Tonight I'm making the Pork Chops Braised in Country Gravy. I had to agree to let my husband have his Tater Tots with it, so I'll probably do some green beans or asparagus for me. Jeff's idea of a good meal is usually a turkey sandwich and Tater Tots -- he is not an adventurous eater at all. He will not eat hardly any veggies and hates pasta -- what's a girl to do? http://www.cookinglight.com/bbs/rolleyes.gif
No plans so far for Saturday or Sunday. Jeff is only home on the weekends (works 2 1/2 hours away) so we just kind of take the weekends as they happen.

No cooking for me this weekend either. I'm going to Cape May, NJ for a little RR with my SO (I like calling him that rather than my boyfriend, so we'll stick to that!). I can't wait to get out of the office!

Jeanne - moving next weekend. So it will only be one week of semi-simple foods. I've got most of my menus figured out for next week (lots of sandwiches, quesadillas, etc.) But I really look forward to having a full kitchen again and smelling up the place with garlic!! http://www.cookinglight.com/bbs/wink.gif

I am actually abandoning my precious CL cookbook and magazines for the weekend. I just got the latest issue of Bon Appetit, and they have some great recipes in there, Spiced Pumpkin pancakes, Chicken with Olives and Feta, Meatloaf with Mustard Dill sauce...

My husband and I are going out Saturday, but Sunday I am making ( by request) a Greek dish called "Pastitsio", it is easy to make and nice for a rainy day (which hopefully we will have here in Texas).

For some reason I don't cook much on the weekends we usually go out to dinner.
Except for sunday and I usually try out new recipes then because I have more time, but not this sunday because I'm going to the Dixie Chicks concert!
