Does anyone have a recipe for these either light or not? A girl I used to work with made this and they were to die for! She no longer works with me and each time I try to reach her she has been on vacation!! She doesn't have voicemail, email and I refuse snail mail. Help! I want to make them for Christmas

I found this Toll House recipe in my files that may be what you are looking for. I think they crinkle when they bake.

CHOCOLATE MINT SNOW-TOP COOKIES
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
One 10-oz pkg (1-1/2 cups) Nestle Toll House Mint flavored semi-sweet chocolate morsels, divided
6 Tablespoons (3/4 stick) butter, softened
1 cup sugar
1-1/2 teaspoons vanilla extract
2 eggs
Confectioner's sugar

In small bowl, combine flour, baking powder, and salt; set aside. Over hot (not boiling) water, melt 1 cup Nestle Toll House Mint Morsels; stir until smooth.*

In large mixer bowl, beat butter and sugar until creamy. Add melted Nestle Toll House Mint Morsels and vanilla extract; beat in eggs. Gradually add flour mixture. Stir in remaining 1/2 cup Nestle Toll House Mint Morsels. Wrap dough in plastic wrap and freeze until firm, about 20 minutes.

Preheat oven to 350 degrees F. Shape dough into 1-inch balls; coat with confectioner's sugar. Place 2 inches apart on ungreased cookie sheet. Bake 10-12 minutes.

Let stand 5 minutes on cookie sheet. Remove to wire rack; cool completely. Makes about 36 cookies.

*Or microwave morsels in bowl on HIGH power 1 minute; stir. Microwave on HIGH power 30 seconds longer; stir until smooth.

Those cookies look great and I'll have to try them. I thought, however, that hershey discontinued the mint chocolate chips because they didn't sell very well. I vaguely remeber reading some discussion about where/if you could find mint chocolate chips. In any event you can always use regular chips and a small amount of peppermint extract (I'd say about 1/2 tsp) if you can't find them.

I haven't made these cookies in quite a while, so I'm not sure either if the mint choc chips are still available. I think the mint choc chips only came in a 10 oz bag rather than 12 oz bag so be aware if you use regular chips.

MaryH....you may find them in the King Arthur's Flour catalog. They have a website if you are not familiar with them and can order a catalog.

Not the same cookie, but here's an easy alternate my husband loves:

Chocolate Mint Refrigerator Cookies

1 package devil's food cake mix
1 egg
3 Tablespoons water
1 teaspoon peppermint extract
1 cup miniature chocolate chips
3/4 cup chopped pecans

Combine all ingredients and mix well. Turn half of dough out onto a sheet of waxed paper and form into a log, twisting ends to seal. Repeat with other half, and refrigerate until firm. (Dough can be frozen at this point for later use). Slice dough into slices about 1/4 inch thick and place slices on an ungreased cookie sheet. Bake at 350 degrees about 8-10 minutes or until done. Remove from cookie sheets and cool on a wire rack.

Probably makes about 4 dozen.
