HEllo,

I made the Caramel Apple Crisp but couldn't find any Rome apples so I used Granny Smith's and Cortlands. One of them cooked down to soft and the other remained a bit crisp. What other apple is a good replacement for Romes? Any thoughts about apple substitutions would be appreciated

I also made the Grilled Turkey Club. I think the Texas Toast did nothing for the recipe. I think it would have been better with just thick sliced sourdough bread would have been better. Interesting variations include smoked turkey with honey mustard.

I think the Granny Smith's should have been the crisp ones and I usually use them for anything that calls for baking apples (i.e. pies, crisps, etc.) Also good are Johnathon and Johnathon Gold - but since Granny Smiths are usually easier to find, that's what I tend to use. I would NOT recommend Gala or Fuji as these are best for eating, not baking.

I think that Macintosh and Rome's have a similar flavour. Macintoshes don't seem to cook down too much either--my mom uses them for pies all the time. I like to use a combination of Empire and Macintosh, since I like the taste of Empire apples.

The crisp ones were definitely the Granny Smiths. I have never had good luck baking with them--they turn into apple chips.
