Since I am still patiently (yeah, right) awaiting the March issue, I thought I would post reviews for all my cooking escapades for 2002 thus far.

In no particular order...

Quinoa Tabbouleh
CL 2000 Annual (don't know what month)

Wow! I loved this. It was my first experience with quinoa, and I have to say I was shockingly surprised. I was anticipating that it would be okay, but more something I would eat just because it is so good for me. I'm glad I was wrong. The raisins add a great sweetness, as does the fresh mint. It was really quick to make, and made for a fantastic lunch the next day. I'm sure it will be even better this summer, when salads are so refreshing.

Buttercrust Corn Pie
CL 2002 Annual (maybe June?)

Another winner! I skipped the tomato salsa altogether. This had a "comfort food" feel to it for me. We served it with bbq chicken on the grill (that's January in the south for you...), which proved a worthy companion. I will most definitely make this again.

Toffee Biscotti
CL November 2000

Fabulous flavor. My only complaint here is that the suggested serving size is ridiculously skimpy. I could not even slice them as small as the recipe called for without the resulting miniature slices completely falling apart. But besides that - tremendous.

Creamy Spinach-Mushroom Skillet Enchiladas
CL October 2001

I thought these were simply okay - not great, not terrible. I won't repeat this one.

Mom's Banana Bread
CL Complete

There is a current thread going on about this one. I loved this recipe, but my review is a bit skewed since I used regular butter instead of light.

Broccoli Cheese Soup
CL January 2002

This was pretty good, but I doubt I will repeat. I agree with many other reviews that said it was just bland. I could tinker with it I suppose, but I probably won't. And now I have a 1/2 block of light Velveeta in my fridge. Hmmm.

Roasted Green Beans
CL 2000 Annual (Again, don't know the month)

10/10! I loved this recipe. Tons of flavor - I ate twice the serving size, and I'm not that much of a green bean fan. Quick and quite tasty.

Spinach Shells Florentine
CL August 2001

I didn't care for this recipe at all. I made the mistake of not reading the bulletin board reviews on this one. Had I done so, I would have discovered that almost everyone said to cut back on the spinach - which was precisely the problem with this recipe for me. Just too "green." It was overpowering. Will not repeat, even with the suggestions. Just didn't do anything for me.

Fettuccine with Finger-Licking Peanut Sauce
CL April 2001

Okay, I realize I am probably the only one on the BB that is just now getting around to this recipe. Why in the world did I wait so long? It really was stellar. From the simple ingredients, to the quick prep, to the fabulous flavor - this recipe has it all. I used shrimp instead of tofu.

Thanks for all the reviews, I love reading them. I just started getting CL last June and I have never tried the Fettuccine with Finger-Licking Peanut Sauce , but I have noticed that it keeps showing up on this board and it always gets great reviews. Time to drag out my CL annual and add this one to an upcoming menu.

Mmm... you've given me some new things to try... the Quinoa Tabbouleh sounds good. And the Roasted Green Beans... and the Toffee Biscotti... :p

There were two recipes in the past year or so for stuffed shells, I think. Was the one you made the one that included feta? I made one that included feta and that cooked on the stovetop rather than being baked, and I really liked it.

No you're not! Now that you've tried it, I'm the only person on the BB who hasn't tried this recipe! It has a permanent home on my "to try" list but so far it hasn't made it onto the grocery list! :p

No, this one did not have feta. I think I remember reading good reviews about that one - maybe I should try it instead.

I have not tried this one either. But I'm the only one on the board who COMPLETELY MISSED IT!!!!:eek:

Can you post the Roasted Green Beans recipe? I did a search to see if it was already on here somewhere, but after wading through lots of non-related threads, I lost patience! Thanks!!

I haven't tried the Fettucine either. But I'm printing it out right now and making it for dinner tonight!!

I've tried to find the Fettuccini with Finger-Licking Peanut Sauce through search, and can't find the recipe! After all this praise, I'd love to try it, too. I also don't have the April issue, so if someone has this saved, please share it with us!

Well, I'm another that wants to try this recipe (also the Spicy Soba w/Chicken and Peanut Sauce recipe -- we really love peanut sauce in this house!) So I dug through stacks of old magazines, catalogs, etc. and found my April 2001 mag. Here's the recipe:

Fettuccine and Tofu with Finger-Licking Peanut Sauce
This dish has endless variations: Substitute chicken, pork, or shrimp for the tofu and almost any kind of pasta for the fettuccine. Or add vegetables of your choice.

1/2 cup fat-free, less-sodium chicken broth
1/4 cup chunky peanut butter
1/4 cup low-sodium soy sauce
3 tablespoons brown sugar
2 tablespoons rice vinegar
2 teaspoons grated peeled fresh ginger
2 teaspoons chile paste with garlic
4 garlic cloves, minced
8 ounces uncooked fettuccine
1 pound firm tofu, drained and cubed
1 cup (2-inch) sliced green onions
1 cup shredded carrot

1. Combine first 8 ingrediants in a small saucepan, Cook over medium heat 5 minutes or until smooth, stirring frequently. Remove from heat.

2. Cool pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently. Yield: 4 servings (serving size: 2 cups)

CALORIES 465 (29% from fat); FAT 14.5g (sat 2.3g, mono 5.3g, poly 6g); PROTEIN 23g; CARB 60.8g; FIBER 4.5g; CHOL 1mg; IRON 9.6mg; SODIUM 713mg; CALC 174mg

We are having this for dinner tomorrow night! We're subbing shrimp, as DH is not big on tofu.
