I am looking for a good recipe for Chicken Cordon Bleu that I can fix for my husband for his birthday in November. I would appreciate any recipes and/or tips you could give me.

Thanks so much.

I have this one and another that I am looking for - I have no clue where I got this but it looks good - have not tried this one but will get you the one I have and is v
very good:

Chicken Cordon Blue

4 boneless chicken breasts
4 slices ham
4 slices Swiss cheese
1 pkg. cream cheese
1 pkg. bacon
1 can mushrooms (sliced)
garlic salt
pepper

Lay chicken flat, place slice ham, Swiss cheese and dollop of cream cheese, roll up and wrap 2 - 3 slices bacon until chicken covered. Secure with toothpick. Sprinkle garlic salt & pepper.

bake 350 x 40 - 50 min. or until golden. During last 10 minutes, drain mushrooms and add to baking dish, stirring to coat mushrooms.

I will locate that other recipe!

Oh wow, you've just reminded me of the Chicken I made before kids, it's been awhile, I think I'll have to make this soon. Here is my version of Chicken cordon bleu:

I start with either chicken cutlets or I'll pound the breast to make them thin. I rub them with olive oil and garlic. Then lay a piece of ham and cheese on each piece of chicken. Roll up and either place seem down in a baking dish or secure w/a tooth pick. Sprinkle with a little seasoned bread crumbs. Bake 350 for 30 - 40 minutes and I serve with a cream cheese sauce.

Thanks for your replies. This doesn't look as difficult as I was afraid it would be. http://www.cookinglight.com/bbs/biggrin.gif

Harryet, would you mind posting the cream cheese sauce that you serve?

Thanks,
Cheryl

Cheryl,

Here is the cream cheese recipe. It's from a Philladelphia cream cheese cookbook, I've had for years http://www.cookinglight.com/bbs/smile.gif

1 8oz pkg Philly cream cheese cubed
1/2 c milk
1/4 c grated parmesan cheese
1/4 t garlic salt (I used powder)

Heat cream cheese and milk over low heat, stir until smooth. Stir in remaining ingredients. Serve warm.

I hope you enjoy it.
