I made the Chicken Scampi recipe over the weekend. I know this has been reviewed a number of times, but I modified mine a bit and it turned out excellant. Reminded me of Linguini in Clam Sauce, but obviously with chicken.
Based on previous threads, I did not bread the chicken, but simply browned it. I then used 6 cloves of garlic, rather than the 3 cloves requested. For the Mrs. Dash (which I do not own) I used the Greek Seasoning from Penzeys. I then simmered the chicken for 15 minutes to reduce the sauce. Used 8 oz. pasta rather than the 6 oz. and added it directly to the chicken mixture and simmered for 5 min. to allow the sauce to soak in.
Excellant. http://www.cookinglight.com/bbs/biggrin.gif
Would definately make it again as above.
