I love Biscotti but really want to make my own. The last recipe I tried was a bit on the pasty/ flavorless side and turned out rock hard (had to hold in coffee at least 20sec to be able to bite into it!!). I am looking for all your great recommended biscotti recipes....keep em coming!

Biscotti is a popular subject on this board. I bet if you do a search (use the "search" button in the upper right hand corner), type biscotti in, and make sure you search for titles only (because you'll probably be buried in results), you can find a bunch of tried and true recipes.

ORANGE PECAN BISCOTTI

3/4 cup pecan pieces
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter -- (2 ounces) softened
1/4 cup plus 2 tablespoons sugar
1/4 teaspoon vanilla extract
1 egg
1 teaspoon grated orange zest (freshly-grated orange
peel)
Preheat oven to 350 degrees.
Place pecans in a 9-inch pie pan and toast in oven about 5-7 minutes, or until pecans are deep brown and glossy. Watch carefully so pecans don't burn. Chop finely and set aside.
Sift together flour, baking powder and salt. Set aside.
In large mixing bowl, combine butter and sugar and beat on medium speed until light and fluffy. Beat in vanilla, egg and orange zest. Fold in dry ingredients and nuts and mix until thoroughly blended.
Line a baking pan with parchment paper. Form dough into a 3- by 12-inch strip. Mound dough up slightly in center of strip so that sliced biscotti will be slightly thicker in the middle.
Bake on middle rack until light golden, about 18-20 minutes. Remove pan from oven and let cookie loaf cool 10 minutes. Reduce oven temperature to 300 degrees.
Either on the pan or on a cutting board, slice loaf of dough diagonally into 1/4-inch slices. You should have between 12 and 16 slices. Turn slices so that cut-side is down. Spread out evenly on pan.
Return pan to oven and bake 20 minutes, turning cookies over halfway through baking. Turn off oven and let cookies cool 1 to 2 hours in oven with heat off. They should be quite crisp. Store in airtight container.

I seem to recall a "Soft Spice Biscotti" in the Sept. 1997 CL issue. Someone hated the hardness of traditional biscotti and devised this recipe which is cooked only once. I guess you could bake any biscotti recipe once. If you would like, I will look for the recipe and post it this weekend.

I think the November 2000 issue had an article specifically about biscotti. I've tried at least 4 of them. I think they're all WONDERFUL!! The recipes in this article all make a pretty dry batter, but it's possible to work with it a little bit and to make the two shaped logs. I really enjoy the flavor and texture of each one. Whichever recipe I've made last is usually my favorite one. :-)
I'm sure you can find recipes for all of these in here somewhere..maybe even in the recipe search section. The ones I've made are lemon with sour lemon drizzle, snickerdoodle, toffee, and Chai spice. I'll be glad to post any that you're interested in having...or if someone doesn't already have them in Mastercook.

Wow. I actually have all the ingredients for the orange pecan biscotti on hand today. I may just have to make a batch. Yum.
