these reviews are from the dinner for 6 menu that cl put together on their website (http://www.cookinglight.com/articles/get_article.asp?aID=604&AreaID=6)
i made this entire meal to celebrate my mom's bday. it was a success. the dessert listed was a cheesecake, but i went for something different.
Asiago Dip With Crostini
this was very tasty! i didnt bother to toast the bread, we just went with crackers and a loaf of sourdough. the only bad part was that the serving size was for one crostini - only one!
Beef Tenderloin With Beaujolais Jus
YUMMMMMY!! i used more mushrooms than called for (about double). this was my favorite part of the meal.
Green Beans Provencale
these were good too. i blanched the beans ahead of time and just reheated them at end as the tenderloin rested and followed the recipe from there to add the rest of the ingredients. it was a very colorful side item, very nice presentation.
Creamy Two-Cheese Potatoes Gratin
these were not my favorite. i much prefer the goat cheese and garlic potato gratin. everyone else said they liked them - but the left overs still sit in my fridge untouched (from weds of last wk). i would not repeat this one.
Chocolate Chip Meringues with Strawberries
this was a perfect way to end a very filling dinner. it was light, and tasty. i let the strawberries sit in the sugar for about 3 hours, which made them super sweet! this was delicious!
my dad said this was my best menu yet! which was very nice to hear. i always get compliments on my cooking, but this menu topped them all. funny thing was i sort of felt like i was cheating because the menu was already put together for me - usually i create my own menus.
