I finally went to the butcher today and bought meat for the freezer. The pork chops looked so appetizing I had to buy them..now the hard part...What the heck do I do with them? They are thick cuts..any ideas?

I've made pork chops in the crock pot before...so juicy and tender by dinner time. Check out crock pot sites using google to search.

Two ways that I have really liked them are from CL:

The BBQ chops are VERY easy. The Chipotle chops can be spicy - depending on how much pepper you use - and the sauce is very tasty (I didn't think I was going to like the sauce, but I LOVED it).

Melissy... I never used the "google" site before... man did I ever find crock pot recipes! When I'm tired tomorrow (as I know I'm going to stay up way too late reading some of these!) I'm going to blame you! Thanks!

I'm at work right now, so can't remember the issues, but both the Vanilla glazed pork chops and the pork chops with pears in lemon vodka sauce are excellent. Both were also easy.

Hi Kathy! My favorite way to eat thick pork chops like that is to stuff them with apples and spices! My mom used to always make them that way when we were little. I am not a big pork chop fan, but they were so very good! The recipe is at home, but if you'd like it, I'll post it for you.

That chop recipe with the vanilla is TERRIFIC!
My husband made it for friends and and everyone loved it. My husband is also fussy about unusual flavors with meat dishes and he raved about this one. A winner.

I always marinate pork chops in store bought onion salad dressing. I wouldn't recommend using it on salads, but as a marinade, it is different and tasty. Then I grill them. Yum!

Hi. I like to use thick chops but make sure butcher does not make a pocket in them. I marinade them (with garlic, salt, pepper, cumin, oregano, olive oil and vinegar). SAute in a pan to brown then place in oven (@ 400) for 30 mins covered. Make in same skillet a sauce with onions, mushrooms and wine and place the sauce on top of chops the last 10 mins uncovered.
You can also marinade chops with your favorite marinade, brown and bake use applesauce or a cranberry chutney or apple chutney on top.
I try to finish my chops (the thick ones) in the oven covered then uncover the last mins since they are less dry and juicy. I also have the grill Calphalon skillet. I have used it for thinner chops.Ops you can also bread your chops and bake them (you can make your own shake and bake mix)

Here's how I usually cook chops:
Heat Pam (or 1 -2 t olive oil) in a non stick skillet over medium high heat
Preheat Oven to 400
Dredge chops in flour
Dip in an egg beater
coat in italian seasoned bread crumbs
spray both of chops with pam
(I also like to salt and pepper them)
Brown both sides of the chops in the skillet (about 3 minutes a side...just
until the "crust" is browned)
Put chops in a casserole (sprayed with Pam) and cover...bake for about 25-30
minutes depending on how thick the chops are.

I had the same thing happen to me a few days ago Kathy http://www.cookinglight.com/bbs/smile.gif The pork chops looked so good I just had to buy them. I didn't really know what to do, but I ended up marinating the chops in a combination of orange juice, soy sauce, brown sugar, sesame oil and vinegar. Then I rubbed both sides of the chops with a combination of chili powder, dry mustard, cayenne pepper, cinnimon, salt and onion powder. I pan seared them and finished them off in a 400 degree oven. They were melt in your mouth tender. I was so surprised, and my DH, who loves pork, ate his and half of mine.
I am a huge pork chop fan now, just because of this pan searing technique. The only chops I had had before were my mother-in-laws, and they tasted like wood chips. I cannot wait to try the vanilla recipe http://www.cookinglight.com/bbs/biggrin.gif

There was a CL recipe for pork & pears all cooked together sometime in the last year. It was good. But I can't remember the name. Maybe someone else will, or you you could search for "pears".

Wow! All these great ideas..I wish I had bought more pork chops! I was thinking about the making the vanilla glazed pork chops, but I am not in the mood to venture out on a vanilla bean search with 2 kiddies with bronchitis! I am such a whimp! I checked out the google search also...wow!I think I am in the mood for apples or pears..something about the Brady Bunch..pork chops and applesauce! (Sorry, lack of sleep!)I think I will have to try all your suggestions! Thanks so much!

We also loved the Chipotle-Marinated Pork Chops with Chimichurri Sauce that lindrusso mentioned. I especially liked the chimichurri sauce - yum!!
Another way I prepare pork chops is to dab them lightly with olive oil, sprinkle with Cajun seasoning (McCormick spice), and grill. This is a very quick & easy technique and the result is delicious.
