I'm all out of fresh ginger, but I happen to have Penzeys whole ginger. I have not used this yet, so I'm not sure how it can be substitued for fresh...exact amounts?
Does anyone know?

Now I was really perplexed on this one. I bought Penzey's whole ginger and I'm not really sure what I expected. I received these big ginger roots that looked like they'd been sitting outside in Roswell, NM next to a cactus for a few years and dried to dust. :confused: I thought it was going to be more 'preserved' fresh ginger. If I rake that thing against my microplane zester I get....ground ginger! :eek: Which I already have in the cupboard! :eek: So what in the world am I supposed to use the whole thing for?? :eek:
In other words, Kim, I have absolutely no idea and I'm also waiting patiently for the answer! :D

The whole ginger you buy at the grocery store is fresh, and the stuff you buy at Penzey's is dried. That's the only difference. You would use the same substitutions as for any fresh to dry (or vice versa) ratio. (I'm not 100% sure, but isn't it something like 1 tsp. dry ground = 1 Tblsp. fresh?).
Kim, since you have the dry gingerroot, just grate it and use exact measurements when dry is called for, and someone will come along and post the exact fresh to dry ratio here soon, so I'd use that when converting your dried for a recipe that calls for fresh. EXCEPT to say that the two don't taste exactly the same, and typically when fresh is called for, it's for a reason, so I would suggest buying some fresh knobs of ginger and keeping them in the freezer to use when fresh is called for, and save your dried ones for recipes that call for dry. Just my .02!

Jewel, I made the same mistake. I guess I will just grate up the dried stuff into my little jar when I run low on the powdered stuff. I thought I was getting more of a substitute for fresh ginger. But it is the same thing as the powdered ginger I already had!!!
