View Full Version : Take Two: ISO Pumpkin Ice Cream Recipe

My previous post on this topic says it has errors and doesn't show...I will now try again!

I need a recipe for pumpkin ice cream for my CL Supper Group on Saturday night. I was sure I would be able to find one so I volunteered to bring it. Have checked all of my cookbooks and looked on internet food sites with no luck. HELP!!! Any recipe will do at this point! Otherwise, I will have to resort to Baskin Robbins!

Hi Peggy!

Why not try going to http://www.google.com and typing the words "pumpkin ice cream" (I did it without the quotation marks) in the search box? I just tried this and came up with quite a few hits. Good luck and let us know if you find a winner!

pumpkin ice cream
1 1/2 cups light cream
6 egg yolks
3/4 cup sugar
1/2 teaspoon vanilla extract
3/4 teaspoon pumpkin pie spice
1 1/2 cups heavy cream
1 1/2 cups canned solid pack pumpkin

Scald cream in heavy saucepan. Whisk yolks, sugar and vanilla in medium bowl. Gradually whisk in the cream, add the spice. Return to saucepan and stir over medium-low heat until mixture thickens, about 10 minutes; do not boil. Remove from heat. Whisk in the heavy cream and the pumpkin. Strain into bowl. Refrigerate until well chilled.

Transfer to ice cream maker and process according to manufacturer's instructions.

BLESS YOU!!!! I didn't know about this site! (Of course, my husband apparently did but didn't bother to share it with me as I was stressing out about the pumpkin ice cream recipe. He just said so!)

In the new make ahead issue there is a recipe for BRANDIED PUMPKIN ICE-CREAM WITH MALTED PECANS that looks wonderful!!


Here is a couple from the Libbys site:


Easy Pumpkin Ice Cream


Ingredients:

2 quarts vanilla ice cream , softened


3 1/4 cups (30-oz. can) LIBBY'SŪ Easy Pumpkin Pie Mix

Directions:
COMBINE ice cream and pumpkin pie mix in large bowl; stir until blended. Freeze in ice-cream maker according to manufacturer's directions.

Pumpkin Mousse Ice Cream Pie


Ingredients:

1 1/4 cups (about 28) crushed gingersnap cookies


1/3 cup butter , melted (we recommend LAND O LAKESŪ Butter)


1/4 cup granulated sugar


2 cups (1 pint) vanilla ice cream , softened


1 cup LIBBY'SŪ 100% Pure Pumpkin


3/4 cup granulated sugar


1 1/2 teaspoons pumpkin pie spice


1 cup whipping cream


1/2 teaspoon vanilla extract


Pumpkin Topping (recipe follows)

Directions:
PREHEAT oven to 375° F.

COMBINE crushed cookies, butter and 1/4 cup sugar in small bowl. Press onto bottom and sides of 9-inch pie plate.

BAKE for 8 minutes. Cool completely. Spread ice cream over gingersnap crust. Freeze for 2 hours or until firm.

COMBINE pumpkin, 3/4 cup sugar and pumpkin pie spice in medium bowl. Beat whipping cream and vanilla extract in small mixer bowl until stiff peaks form; fold into pumpkin mixture. Spoon over ice cream. Freeze for 1 hour or until firm. Serve with Pumpkin Topping.

FOR PUMPKIN TOPPING
COMBINE 12.25-ounce jar caramel or butterscotch sauce, 1/2 cup LIBBY'SŪ 100% Pure Pumpkin and 1/2 teaspoon pumpkin pie spice in small bowl.


I am on a real pumpkin kick so they all sound wonderful!!

You're most welcome! I find http://www.google.com quite good. Another good URL is http://www.metacrawler.com (it allows you to search up to 15 search engines at once, including google, AltaVista, Excite...).
