We're moving and I'm trying to use up some baking supplies before we go. Here's what I've got that I don't want to move:

3 bars semi-sweet chocolate
2 bars unsweetened chocolate
2 bars German chocolate
2 bars bittersweet chocolate
condensed milk
espresso powder
butterscotch chips
mint flavored candy melts

Any recipes or suggestions would be greatly appreciated! TIA

Well, you could make brownies with the unsweetened chocolate. These are not really light, but they are my absolute favorite recipe:

Brownies - From the Better Homes and Gardens New Junior Cookbook (circa 1978 :rolleyes: ) I'll leave out the instructions to get your mom to come help you.

3/4 C butter/margarine
2 squares unsweetened chocolate
1 1/3 C sugar
3 eggs
1 C all purpose flour
1 tsp baking powder
1/2 tsp salt


1. Preheat oven to 350. Spray 9x13 pan with non-stick cooking spray

2. Put butter and chocolate into saucepan. Over low heat, cook stirring often until butter and chocolate melt. Remove from heat.

3. Stir sugar into chocolate mixture. Stir in the eggs, one at a time until well mixed.

4. In a small bowl, mix dry ingredients. Stir into chocolate mixture. Scrape into a greased pan. Bake for 25-30 minutes - until tests done with a toothpick.

5. Remove from oven, and cool completely. When cool, sprinkle with powdered sugar.

Makes 24-36 brownies.


FOr your bittersweet chocolate, one of my favorite uses is the Bittersweet Chocolate pudding from CL. That is a good easy recipe (and light!).

Thanks for the brownie recipe- that looks so good! Is the CL Bittersweet Chocolate pudding the one with soymilk and coffee? If not, would you post yours? Thanks again! JennyLiz

Here is the recipe for the CL Bittersweet Chocolate Pudding. Yours sounds pretty good too - would you mind posting your recipe? This goes together pretty quick, and it is a favorite of DH.

Here goes:

Ingredients
3 1/2 cups skim milk, divided
1 cup Dutch process or unsweetened cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
1 cup sugar
1 large egg, lightly beaten
1 large egg yolk, lightly beaten
2 ounces bittersweet chocolate, coarsely chopped
1 tablespoon vanilla extract


Directions
Estimated Total Time: 25 minutes

Combine 1 cup milk, cocoa, cornstarch, and salt in a large bowl; stir well with a whisk. Set aside.Cook 2 1/2 cups milk in a large, heavy saucepan over medium-high heat to 180° or until tiny bubbles form around edge (do not boil). Remove from heat; stir in sugar with a whisk until sugar dissolves. Add cocoa mixture to pan, stirring until blended. Bring to a boil over medium heat; cook 2 minutes, stirring constantly.Combine egg and egg yolk in a bowl, stirring well with a whisk. Gradually add milk mixture to egg mixture, stirring constantly. Return mixture to pan. Cook over medium heat until thick (about 2 minutes); stir constantly. Remove from heat. Stir in chocolate and vanilla; stir until chocolate melts. Serve warm or chilled.

Be sure to make CL's butterscotch bars with the butterscotch chips. They are great. It should be easy to find the recipe with a search on this BB.

Cut up the bittersweet bars and put them in chocolate chip cookies -- yum.

This is so good and the chocolate hides that "soy milk" flavor- you'd never know it was good for you! Enjoy!

Chocolate Espresso Pudding

Ingredients:
1/2 cup packed brown sugar
1/4 cup cornstarch
3 tablespoons unsweetened cocoa
1 tablespoon instant coffee granules
1/8 teaspoon salt
2 cups fat-free soy milk
2 ounces bittersweet chocolate, chopped
1 teaspoon vanilla extract


Directions
Combine first 5 ingredients in a medium, heavy saucepan, and stir well with a whisk. Gradually stir in milk, and bring to a boil over medium heat. Reduce heat, and simmer 1 minute or until thick. Remove from heat, and add chocolate, stirring until melted. Stir in vanilla. Pour about 1/2 cup pudding into each of 4 dessert dishes; cover surface of pudding with plastic wrap. Chill at least 4 hours. Remove plastic wrap to serve.

Nutrition Facts (per Serving):
281 calories, 56.2 g carbohydrates, 0 mg cholesteral, 4.8 g fat, 134 mg sodium, 5.5 g protein, 237 mg calcium, 2 mg iron, 0.6 g fiber

Schuh, thanks for reminding me about the butterscotch bars. They were on my list to try a while back (is that why I bought the butterscotch chips?), but I had long since forgotten! JennyLiz
