I made a little goof-up with the Winter Squash Risotto with Radicchio, but it was still good! The recipe only called for 1 c. of squash puree, and I accidentally used the whole 1/2 squash, which was probably about 1 2/3 cups. Someone needs to start reading directions! http://www.cookinglight.com/bbs/redface.gif It was more like squash with risotto instead of risotto with squash, but the radicchio was a great touch, and the seasonings were great! I'll definitely make it again, but this time with the right proportions! I also made the Winter Squash and Bok Choy stir fry with my other half of squash; it was yummy, too. Nothing phenomenal, but I served it over brown basmati, and it was a great combination.
