I know this is stupid, stupid, stupid...but, I can't find flank steak anywhere. I don't eat very much beef, so don't really know what I can substitute. Can anyone help?

you can usually substitute a london broil cut, but it is usually a little thicker, so your cooking times may be longer.

Flank steak is sometimes labeled as "London Broil," though that's not entirely accurate as london broil is a type of dish made with flank steak. Flank steak is also much leaner than most other cuts of beef, which I think is why CL always has recipes for it.

I've never had trouble finding it (you may have to ask your butcher or someone at the meat counter of your grocery), so I can't speak for substitutes. Nonetheless, using our favorite resource here, Cook's Thesaurus (www.foodsubs.com), here are some suggestions:

"flank steak Notes: This is a lean, flat cut that's fairly tender and extremely flavorful. Properly marinated, it's a wonderful steak to grill or broil, but don't overcook it or it will become very tough. Before serving, cut the steak into thin slices at a slant against the grain. Substitutes: skirt steak OR hanger steak OR top round (for London broil) OR tri-tip roast."

There is NO substitute for Flank Steak...I found it on sale last week for $3.99/lb (regular $6.99/lb) and bought 4 of the darn things! ;) I already had 3 in the freezer! :o

Ask your butcher! That's what they're there for!

Jewel, if famine hits the US due to the current East Coast drought, I am getting in my car, driving to the Pacific Northwest, and moving in with you. Your freezer must contain enough meat to feed the entire carnivorous subset of this BB for months! I remember something about 15 pounds of boneless skinless chicken, and now with the flank steaks.....

It must truly be a sight to behold

Well, at least now we now where all the flank steak went...it's in Jewel's freezer!!!

OK, you guys, I'll admit to being a carnivore... :o But I just bought two Don Mauer cookbooks, and HE even loves Flank Steak, so there! :D Uses it in everything...

With my FoodSaver I'm able to keep meat for quite a long time in the freezer. That's one of the main reasons I bought it! Prices in the Seattle area are horrendous. The Safeway two blocks from my house sells weenie size 32A boneless/skinless chicken breasts for $4.99/lb regular price! :eek: When Albertsons (2 mile drive) has a sale on their 38D's for $1.99/lb I buy all the boobies I can stuff in my freezer sealed in 2 breast packs! Same thing with Pork Tenderloin! Average price around here is $5.99/lb. When I find it for $3.99 I stock up!

And I promise...if the economy hits a speed bump and everyone needs a pick-me-up, haul a$$ to my place and we'll fire up the grill! :D

I do the same thing Jewel, and it is the reason I bought my food saver also. I can't always find flank steak when I want it and if I do it is expensive, so when a sale comes along, I buy them all! Sorry all you other floks, but it's first come first serve. Same with the other meats you mentioned and seafood too. DH ran to the store for a few things this weekend and they had scallops on sale for $2.00 a pound instead of the normal $6 to $8. He bought 5 pounds.

Don't forget skirt steak! It's a little better than flank steak in my opinion. A little more tender.
