Help! I need to come up with a great pie for Thanksgiving dinner. My dad -- who had heart bypass surgery two weeks ago -- can't digest milk and has to avoid cholesterol.

Any ideas? I want this to be a special Thanksgiving!

Stephanie, I really hope your father feels better soon.

My mom makes this pie every Thanksgiving for the few people who cannot eat milk. Since they are already vegetarian, the pie contains no eggs. She follows Betty Crocker's recipe for a pumpkin pie, but makes the following replacements:

For eggs she uses 3 tablespoons of arrowroot for one egg.
For the condensed milk she uses vanilla flavored soy milk.
For the sugar, she substitutes 1/2 cup honey for each cup of sugar
For the crust she uses the Betty Crocker Oil Crust. It has two tablespoons of vegetable oil in a 10-inch, two crust pie. You can use a "good" oil, such as safflower or canola. the pie crust is dreamy http://www.cookinglight.com/bbs/smile.gif

The pie filling is a little runnier than usual, and needs to be baked about 10 minutes longer. Still, it tastes very good for a vegan pie http://www.cookinglight.com/bbs/tongue.gif If you need more exact instructions, I can try to track them down.

Hi Stephanie, my dad had quadruple bypass surgery in mid August. He is back at work again, it truly amazes me how wonderful modern medicine is. I hope your Dad is doing well. Every day he will make great strides in feeling stronger.
